Description
This Chicken Salad Croissant Sandwich is the perfect lunch or brunch idea! It is a classic recipe that everyone will love and it only takes 10 minutes to make!
Ingredients

- A Rotisserie Chicken or 2 chicken breasts (cooked), remove skin and dice up the chicken into small cubes
- 3/4 cup fine chopped yellow onion
- 3/4 cup fine chopped celery
- 2 tablespoons fresh parsley, finely chopped
- 1 teaspoon lemon juice
- 1 tablespoon dijon mustard
- 1/2 teaspoon dried dill
- 1/3 cup of mayonnaise (I prefer the Hellmann's brand)
- 1/2 teaspoon salt
- 1/8 teaspoon black pepper
- 4 regular sized croissants or 10 mini croissants
- Optional: Romaine heart lettuce for serving
Instructions
- Add all the ingredients into a bowl. Give it a really good stir.
- Cover your bowl with plastic wrap and allow to sit in the fridge for at least 30 minutes prior to serving.
- Slice the croissant in half and load on the chicken salad. Top with lettuce if desired. Slice in half and enjoy!

Notes
- If you've just purchased the rotisserie chicken, allow it to cool a bit on the countertop before chopping up.
- A finely chopped onion and celery work best in this recipe. You want them a little bit smaller size than the chicken.
