Chicken Salad Croissant Sandwich

Description

This Chicken Salad Croissant Sandwich is the perfect lunch or brunch idea! It is a classic recipe that everyone will love and it only takes 10 minutes to make!


Ingredients

Scale
  • A Rotisserie Chicken or 2 chicken breasts (cooked), remove skin and dice up the chicken into small cubes
  • 3/4 cup fine chopped yellow onion
  • 3/4 cup fine chopped celery
  • 2 tablespoons fresh parsley, finely chopped
  • 1 teaspoon lemon juice
  • 1 tablespoon dijon mustard
  • 1/2 teaspoon dried dill
  • 1/3 cup of mayonnaise (I prefer the Hellmann's brand)
  • 1/2 teaspoon salt
  • 1/8 teaspoon black pepper
  • 4 regular sized croissants or 10 mini croissants
  • Optional: Romaine heart lettuce for serving

Instructions

  1. Add all the ingredients into a bowl. Give it a really good stir.
  2. Cover your bowl with plastic wrap and allow to sit in the fridge for at least 30 minutes prior to serving.
  3. Slice the croissant in half and load on the chicken salad. Top with lettuce if desired. Slice in half and enjoy!

Notes

  • If you've just purchased the rotisserie chicken, allow it to cool a bit on the countertop before chopping up.
  • A finely chopped onion and celery work best in this recipe. You want them a little bit smaller size than the chicken.
