This Chicken Salad with Croissants is the perfect lunch or brunch idea! It is a classic recipe that everyone will love and it only takes 10 minutes to make!

Quick Chicken Salad with Croissants Recipe

This traditional chicken salad is the easiest recipe and it is super delicious. I prep this on Sunday and pack it in my hubby’s lunch during the week. This recipe uses a rotisserie chicken from the grocery store, which is a total timesaver.

This chicken salad is excellent on brioche buns, Hawaiian rolls, sourdough bread, but my all time favorite is on buttery, flaky croissants. This recipe is my go to anytime I'm hosting a brunch or shower type of event. I usually pick up the mini croissants for a party, since I'll be serving a variety of food.

What are extra ingredients you can add to Chicken Salad?

This is a classic recipe, but feel free to add ingredients. Cranberries, grapes, and/or pecans are great additions to chicken salad.

Can I use chicken breast instead of rotisserie chicken?

Of course and I do this often. Pat dry the chicken breast and season with olive oil, salt and pepper and bake at 375 for 30 minutes or until internal temperature reaches 165 degrees. Once the chicken has cooled, dice it up and add to the remaining ingredients.

What pairs well with Chicken Salad?

I love a fruit salad, or a small side salad with my chicken salad croissants. Also, you can't go wrong with some kettle cooked chips or a cup of soup!

  1. Add all of the ingredients into a bowl and stir well.
  2. Cover bowl with plastic wrap and allow to sit in the fridge for at least 30 minutes prior to serving.

Description

This Chicken Salad with Croissants is the perfect lunch or brunch idea! It is a classic recipe that everyone will love and it only takes 10 minutes to make!


Ingredients

Scale
  • A Rotisserie Chicken or 2 chicken breasts (cooked), remove skin and dice up the chicken into small cubes
  • ¾ cup fine chopped yellow onion
  • ¾ cup fine chopped celery
  • 2 tablespoons fresh parsley, finely chopped
  • 1 teaspoon lemon juice
  • 1 tablespoon dijon mustard
  • ½ teaspoon dried dill
  • ⅓ cup of mayonnaise (I use Hellman’s, but if you like Dukes-just go with it whatever feels right)
  • ½ teaspoon salt
  • ⅛ teaspoon black pepper
  • 4 regular sized croissants or 10 mini croissants

 


Instructions

  1. Add all the ingredients into a bowl. Give it a really good stir.
  2. Cover your bowl with plastic wrap and allow to sit in the fridge for at least 30 minutes prior to serving.

How to Store It

I like to store my chicken salad in a glass container with a lid. It will stay good in the fridge for 3 days, as long as it is sealed well.
