These Chicken Salad Croissants are the easiest recipe and they are super delicious. I meal prep this on Sunday and pack it in my hubby’s lunch during the week. This recipe uses a rotisserie chicken from the grocery store, which is a huge timesaver.
This chicken salad is excellent on brioche buns, Hawaiian rolls, sourdough bread, but my all time favorite is on buttery, flaky croissants. This is my go to baby/wedding shower or brunch recipe, along with my Brioche French Toast. I usually pick up the mini croissants for a party, since I'll be serving a variety of food.

How to Make Chicken Salad Croissant Sandwiches:
Step 1: Add all of the ingredients into a bowl and stir well.
Step 2: Cover the bowl with plastic wrap and allow the chicken salad to sit in the fridge for at least 30 minutes prior to serving.
Step 3: Slice the croissant in half and load on the chicken salad. Top with lettuce if desired. Slice in half and enjoy!

Ingredients
- A Rotisserie Chicken or 2 chicken breasts (cooked), remove skin and dice up the chicken into small cubes
- ¾ cup fine chopped yellow onion
- ¾ cup fine chopped celery
- 2 tablespoons fresh parsley, finely chopped
- 1 teaspoon lemon juice
- 1 tablespoon dijon mustard
- ½ teaspoon dried dill
- ⅓ cup of mayonnaise (I prefer the Hellmann's brand)
- ½ teaspoon salt
- ⅛ teaspoon black pepper
- 4 regular sized croissants or 10 mini croissants
- Optional: Romaine heart lettuce for serving
Instructions
- Add all the ingredients into a bowl. Give it a really good stir.
- Cover your bowl with plastic wrap and allow to sit in the fridge for at least 30 minutes prior to serving.
