Description
This Chipotle Lime Sauce is the most incredible sauce bursting with Mexican flavors and it only takes 5 minutes to make! This sauce makes the best topping for burgers and sandwiches or use it as a dip for fries, onion rings, or even veggies.
Ingredients
- 1 cup of mayonnaise ( I prefer Hellman's)
- 1 to 2 chipotle peppers in adobo sauce (2 peppers will be spicy. You can always start with 1 and add in 1 extra after tasting)
- 2 tablespoons fresh cilantro, chopped
- 1 garlic clove, chopped
- 1 tablespoon fresh lime juice
- 1/2 teaspoon cumin
- 1/4 teaspoon paprika
- 1/2 teaspoon salt
Instructions
- Add mayonnaise, adobo pepper(s), garlic clove, cilantro, lime juice, cumin, paprika, and salt into an immersion blender container or food processor. You can use a blender if you don't have either of these.
- Blend until entirely smooth in texture.
- Give it a taste. If it isn't spicy enough, add in one more chipotle pepper and blend again. If it is too spicy, add in another 1/2 cup of mayonnaise to balance out the heat.

Enjoy this sauce spread on a burger or sandwich or drizzle over anything fried!
If you don't have an immersion blender, use a food processor or a regular blender.
Adjust the spice level accordingly. I suggest starting with just one pepper, then adding to taste. You can always add spice, but it's harder to take it away.
