Description
These Air Fryer Mini Potatoes are absolutely delicious with a crispy outside that is seasoned to perfection. These baby potatoes are the perfect side dish and so easy to make!
Ingredients

- 1 lb baby potatoes (the smallest you can find), rinsed, scrubbed and dried
- 1 tablespoon olive oil
- 1 teaspoon dried oregano
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/8 teaspoon black pepper
- Optional for dipping: 1/2 cup sour cream with 1 tablespoon minced chive
Instructions
- Preheat the air fryer to 400 degrees. If your air fryer requires the time at that point (mine does), set timer to 16 minutes.
- Into a large bowl, add in the baby potatoes, olive oil, garlic powder, oregano, salt and pepper and toss to combine.
- Once the air fryer is preheated, add in the potatoes.
- Cook for 16 minutes, shaking the basket half way through cooking.
- When the timer goes off, check the potatoes with a fork to make sure they are tender. If the fork doesn't go in easy, you probably have larger potatoes than I did, and may need to cook for another few minutes.
- Serve and Enjoy!
Notes
Serve with sour cream and chive dip if desired.
This recipe easily feeds 2 people for a side dish or 4 for an appetizer. You can easily double it if you have a mid to large size air fryer and follow the same instructions.
