Air Fryer Mini Potatoes

Description

These Air Fryer Mini Potatoes are absolutely delicious with a crispy outside that is seasoned to perfection. These baby potatoes are the perfect side dish and so easy to make!


Ingredients

Scale
  • 1 lb baby potatoes (the smallest you can find), rinsed, scrubbed and dried
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/8 teaspoon black pepper
  • Optional for dipping: 1/2 cup sour cream with 1 tablespoon minced chive

Instructions

Preheat the air fryer to 400 degrees. If your air fryer requires the time at that point (mine does), set timer to 16 minutes.

Into a large bowl, add in the baby potatoes, olive oil, garlic powder, oregano, salt and pepper and toss to combine.

Once the air fryer is preheated, add in the potatoes.

Cook for 16 minutes, shaking the basket half way through cooking.

When the timer goes off, check the potatoes with a fork to make sure they are tender. If the fork doesn't go in easy, you probably have larger potatoes than I did, and may need to cook for another few minutes.

Notes

Serve with sour cream and chive dip if desired. (It's so good!)

This recipe easily feeds 2 people for a side dish or 4 for an appetizer. You can easily double it if you have a mid to large size air fryer and follow the same instructions.
