I recently got an air fryer and I am having lots of fun testing out recipes. Some items I'm not a huge fan of, but I absolutely love potatoes in the air fryer. They crisp up really nicely and are so easy to make! These potatoes make a great appetizer or side dish.

The Ingredients:
Baby Potatoes- I like to look for the smallest potatoes available, so they cook quickly and get nice and crispy. This size in the photo above is perfect. They crisp up so well. They are also bite size when eating, which is always fun, especially if you are serving them for an appetizer.
Olive Oil- Helps to adhere the seasoning to the potatoes.
Garlic Powder, Oregano, and Salt and Pepper- Simple seasonings that result in a great tasting potato.
Toppings: This Sour Cream Sauce is optional, but is absolutely delicious if you are looking for a dip for the potatoes. Crumbled bacon would make a nice addition too.

How to Make Air Fryer Mini Potatoes:
Step 1: Preheat the air fryer to 400 degrees. Into a large bowl, add in the baby potatoes, olive oil, garlic powder, oregano, salt and pepper and toss to combine.
Step 2: Once the air fryer is preheated, add in the potatoes.
Step 3: Cook for 16 minutes, shaking the basket half way through cooking.
Step 4: When the timer goes off, check the potatoes with a fork to make sure they are tender. If the fork doesn't go in easy, you probably have larger potatoes than I did, and may need to cook for another few minutes.
Step 5: Serve with sour cream and chive dip if desired. Enjoy!
Expert Tip:
I suggest using seasoning versus minced garlic and fresh herbs because they tend to burn in this recipe and get bitter.

Depending on the size of the potatoes, they will cook entirely in 15 to 20 minutes. I used a really small baby potato, and they were finished in the air fryer in 16 minutes.
I personally believe the best thing to cook in an air fryer are potatoes. They always end up so much crispier opposed to oven baked. Fries and baby potatoes are my favorite!
Yes. Think about an oven, we always preheat our oven before putting in the food. The air fryer is similar and preheating will get you a crispier result.

Ingredients
- 1 lb baby potatoes (the smallest you can find), rinsed, scrubbed and dried
- 1 tablespoon olive oil
- 1 teaspoon dried oregano
- 1 teaspoon garlic powder
- ½ teaspoon salt
- ⅛ teaspoon black pepper
- Optional for dipping: ½ cup sour cream with 1 tablespoon minced chive
Instructions
- Preheat the air fryer to 400 degrees. If your air fryer requires the time at that point (mine does), set timer to 16 minutes.
- Into a large bowl, add in the baby potatoes, olive oil, garlic powder, oregano, salt and pepper and toss to combine.
- Once the air fryer is preheated, add in the potatoes.
- Cook for 16 minutes, shaking the basket half way through cooking.
