This Creamy Chicken and Noodles Recipe is comfort food at it's finest! Made all in one pot and ready in just 30 minutes, this is the perfect Fall and Winter Weeknight Dinner.
Last Saturday, my husband cooked up ramen with crispy pork and we sat on the couch for dinner with our bowls full and watched a Christmas movie. It was glorious and exactly what I want on a cold December night.
It really got me inspired to create some more comfort food dishes, where you can scoop some into a bowl and have a full meal with little effort. This Chicken and Noodles Recipe is just that. It's tender rotisserie chicken, egg noodles, and veggies in a creamy sauce, and it's absolutely delicious!

Ingredients:
Chicken- I prefer rotisserie chicken for this recipe for the ability to pull it apart easily. It's also very tender and delicious, and a quick grocery store trip away. If you prefer to use cooked chicken breast, that's fine too, just cut it into pieces or shred it.
Noodles- This recipe uses wide egg noodles for that classic chicken and noodle feel. Egg noodles are also great because they cook really quickly.
Onion and Carrot- Traditional vegetables that pair well with chicken and noodles.
Chicken Stock and Heavy Cream- Combine to cook the pasta, add flavor, and creates a creamy sauce. I highly recommend Chicken Stock versus Chicken broth for this recipe for it's bolder, richer flavors.

Love celery? Add in one celery stalk, diced fine, with the carrot and onion.

How to Make this Chicken and Noodles Recipe:
Step 1: Heat a large dutch oven or pot over medium low heat. Add in the butter and melt. Pour in carrot and onion and cook to soften, about 5 minutes, stirring half way in between. Stir in garlic and cook for 60 seconds.
Step 2: Pour in chicken stock, egg noodles and heavy cream. Stir and increase stovetop to medium heat, then cover for 5 minutes. Uncover, reduce heat to medium low and stir. Cover and cook an additional 5 minutes until noodles are very al dente, firm when bitten into.
Step 3: Stir in the chicken pieces and cover again for 4-6 minutes, until the pasta is cooked fully and the chicken is warm.
Step 4: Next, stir in the fresh parsley.
Step 5: Serve immediately and enjoy!
Expert Tips:
- When cooking the vegetables, watch that they aren't browning at all. We want them softened, with the onions having a translucent appearance.
- Keep a close eye on the pasta to make sure it's not overcooking. Reduce the heat and uncover, if needed.
- I like to save the rotisserie chicken to add in for the last 5 or so minutes of cooking, so it doesn't turn into really skinny strands of overcooked chicken.
- Serve this chicken and noodle recipe as soon as it is finished for the best creamy texture. Turn off the stovetop heat to avoid overcooking the pasta.

Yes, but you do need to add more chicken stock and heavy cream for the best results. I added the cold chicken and noodles back into the dutch oven over medium low heat with about ¼ cup of additional chicken stock and covered it for 5 minutes. Then, I stirred it well and added about ⅛ cup of heavy cream and let it cook for another 3 minutes. It came out great again!

- 1 rotisserie chicken, skin removed and chicken hand pulled or shredded
- 1 tablespoon parsley, minced
