Chicken Breast: Chicken breast is diced into small cubes and cooks right in the casserole. I recommend Smart Chicken for less prep work and always a great tasting, juicy chicken breast.
Cheddar Cheese: Brings in a nice sharp flavor and coats the casserole in bubbly cheese. Shred the cheese from a block for the best texture, instead of buying cheese in a bag. Bagged cheese doesn't melt well.
Broccoli: Fresh broccoli is brought in as a great veggie to pair with chicken, cheese and potatoes and it roasts to perfection in the oven.
Potatoes: Yukon Golds bake really well into this casserole and have a creamy, buttery texture. The skin is also very thin and doesn't need to be removed.
Mayonnaise & Butter: Helps coat the chicken, broccoli and potatoes to cook in the oven without drying out.

Substitutions and Variations:
If you're not big on onions and garlic, just leave them out.
Cheddar Cheese can be substituted with Monterey or Pepper Jack Cheese.
Russet or red potatoes can be substituted for the Yukon golds, but you will want to peel the Russets first because their skin is on the thicker side.
How to Make Chicken Broccoli Potato Casserole:
Step 1: Preheat the oven to 375 degrees. Add mayonnaise into a bowl with ranch powder, paprika, dried parsley and salt and combine.
Step 2: Into a large bowl, combine chicken breast, potatoes, broccoli, 1 cup of cheddar cheese, garlic, onion, melted butter, and mayonnaise with spices. Stir to combine.
Step 3: Load the chicken mixture into a greased 9x13 casserole dish. Top with remaining cheddar cheese. Cover with foil and bake for 35 minutes. Uncover and bake for another 15-20 minutes until the chicken reaches at least an internal temperature of 165 degrees and the potatoes are tender.
Step 4: Allow the casserole to cool for 10 minutes. Top with fresh parsley, serve and enjoy!
