This Gnocchi Bolognese is flavor packed and super easy to make all in one pot! Don't worry, it doesn't require all day of cooking either. From start to finish, it only takes under an hour for this Italian classic to be ready to eat.
This is one of my favorite weeknight dinners, especially in the Fall and Winter months. It's cozy, and packs meat, veggies, and carbs all into one pot. Serve it with a slab of bread and we've got some serious comfort food.

Ingredients:

Gnocchi: Tastes like a dumpling and is made from potatoes. These can be found in the pasta isle of the grocery store and cook right in the sauce in this recipe.
Milk: I recommend whole milk for this recipe for its higher fat content and richer flavors.
Ground Beef: I like an 85/15 lean to fat ratio for this recipe because it stays juicy when cooking, but doesn't leave as much grease in the pan as an 80/20 will leave.
Red Wine: Cabernet Sauvignon is my recommendation. It's dry with really rich flavors that pair perfectly with the spices and flavors.

Substitutions and Variations:
- The Cabernet Sauvignon can be substituted with Merlot or a Chardonnay. If you need to leave out the wine, you can replace it with chicken or beef stock.
- A combination of ground beef and ground pork (or Italian Sausage) would also be delicious in this recipe. Use 8 ounces of each.
- The tomato sauce can be swapped out with crushed tomatoes.

How to Make Gnocchi Bolognese:

Step 1: Place a large Dutch Oven on the stovetop over medium low heat. Add in olive oil, then onion, carrot and celery. Cook for 3-5 minutes until softened and translucent. Add in garlic, salt, oregano, basil and red pepper flakes. Cook for 60 seconds.

Step 2: Add the ground beef into the vegetable mixture. Break up and cook until no longer pink. Push the beef and vegetables to one side and place a few paper towels into the pot on the other side to soak up some of the excess grease. Discard the grease soaked paper towels into the trash. Note: Do this carefully using tongs and don't burn yourself.

Step 3: Pour in the wine and cook for 3 minutes. Pour in the tomato sauce and milk. Stir well to combine. Bring the sauce to a low boil, then turn to low and simmer covered for 20 minutes.

Step 4: Uncover, stir the gnocchi into the sauce and cook covered for 8-10 minutes, stirring once about 5 minutes in. Uncover and check for tender gnocchi.

Step 5: Top with Parmesan cheese, then serve and enjoy!
Expert Tips:
- When chopping the celery, onion and carrot, keep it on the finer side so that it softens completely in the sauce.
- Don't overcook the gnocchi in the sauce. It will stick to the bottom of the pan after 8-10 minutes of cooking.

- 16 ounce ground beef, 85/15 preferred
- ยฝ cup red wine, Cabernet Sauvignon preferred
- 15 ounce can tomato sauce
- ยฝ cup whole milk
- 16 ounce packaged gnocchi *packaged in pasta isle, not frozen
- ยฝ cup parmesan cheese, shredded
