These Roast Beef Sliders on Hawaiian Rolls are one of the best game day appetizers I have up my sleeve. They are layered with flavor and baked to perfection, then served hot. Plus, these mini roast beef sandwiches only take about 30 minutes to make.
These sliders go deep into flavor town. The roast beef is layered with caramelized onions, cheddar cheese, and horseradish mayo in between savory Hawaiian rolls. It just doesn't get much better than that!
This weekend is the Super Bowl and I can't think of a better recipe to serve my guests.

Ingredients:
Deli Roast Beef- The base of these sliders. Roast beef is tender and buttery. It's important to buy a good quality roast beef. I used Boar's Head for this recipe and it was fresh and delicious.
Cheddar Cheese- Brings in a creamy, sharp flavor that pairs really well with roast beef. You can use white cheddar like I did, or a regular cheddar cheese.
King's Hawaiian Rolls- These feel like a staple in my house, especially in the summer time. They are so easy to create a meal out of. I used the Savory Butter Rolls by King's Hawaiian and I highly recommend. I enjoyed the Savory versus Sweet for these mini roast beef sandwiches.
Onion, Butter and Salt- The butter and salt helps to caramelize the natural sugars in the yellow onions into a sweet, complex taste.
Mayonnaise, Prepared Horseradish, and Black Pepper- Create the horseradish aioli sauce that spreads onto the buns for an extra kick. Don't be afraid of the heat in this recipe, it is really subtle and your taste buds will only pick up a hint of the horseradish.
Butter, Garlic and Parsley- This is an optional additional step for the sliders, but I highly recommend. Garlic is toasted in the butter for another savory addition to brush onto the Hawaiian rolls. Then, top with minced parsley for a finishing touch.
Substitutions & Variations:
- Love traditional King's Hawaiian Sweet Rolls? Feel free to use those or any of your favorite slider rolls. Check out my choices for Best Buns for Pulled Pork Sandwiches. They would all be great with roast beef too.
- Do you like a strong horseradish taste? If so, double the amount of prepared horseradish in the mayo recipe. The current recipe only has a subtle horseradish flavor.
- Don't like cheddar cheese with Roast Beef? Swiss or Baby Swiss would be delicious too.
- Meatlover? Make it a full pound of roast beef!
- Hate onions or short on time? Leave out the onions. They are my favorite, but the sandwiches still taste great without them.
How to Make Hot Roast Beef Sliders on Hawaiian Rolls:

Here are the Step by Step Instructions for these Roast Beef Sliders.
Step 1: Preheat the oven to 350 degrees. Cut the onions into slices between ¼ inch and ½ inch thick. Try to get similar thickness on them, so that they cook evenly.
Step 2: Into a large Stainless Steel Skillet over medium low heat, melt 2 tablespoons of butter. To Caramelize the onions, toss in the onions and salt and break them up with a wooden spoon. Cover and cook for 4 minutes. Take off the cover and cook for an additional 10 to 12 minutes, stirring every few minutes. If the onions start to brown, turn down the heat.
Step 3: Prepare the Horseradish Aioli Sauce while the onions are caramelizing. Into a small bowl, whisk together the mayonnaise, prepared horseradish and black pepper. Set aside.
Step 4: After about 15 minutes, the caramelized onions should be complete. Place them into a bowl with the remaining butter in the pan.
Step 5: Assemble the sliders by slicing halfway between the Kings Hawaiian Rolls to create a top and bottom layer. Add all the roast beef on the bottom layer. Spread the Horseradish Aioli on the top half.
Step 6: Next, add the caramelized onion, then the cheddar cheese over the roast beef.

Step 8: Make the Garlic Butter Topping (Optional, but it's delish) While the sliders are baking, heat a small skillet over medium low heat. Add in the remaining 2 tablespoons of butter and melt. Toss in the garlic, and cook for 1 to 2 minutes, stirring throughout to avoid burning. Transfer to a bowl.
Step 9: Once the hot roast beef sliders come out of the oven, brush with garlic butter and top with fresh parsley. Cut with a large knife into individual sliders and enjoy!
Expert Tips:
- Don't cut the onions too skinny. I find that a cut between ¼ inch and ½ inch is best for caramelizing onions. If they are too thick, they won't caramelize, but too thin and they will burn.
- When caramelizing the onions, it's really important to cook them low and slow. This allows the natural sugars to release from the onions and it will produce a really nice deep flavor.
- Be sure to keep a close eye on the garlic when cooking it in the butter. It toasts really quickly.

- 8 ounce cheddar cheese, shredded
- ¼ cup mayonnaise
- 1 teaspoon prepared horseradish
- ½ teaspoon sea salt
- ¼ teaspoon black pepper
- 2 garlic cloves, minced
- 2 teaspoons parsley, minced
