The Ingredients:
Whole Carrots- Sweet root vegetable that caramelizes into the most delicious side dish. You won't even know you're eating vegetables. If you love carrots, try this carrot pasta sauce and Carrot and Banana Muffins.
Honey & Brown Sugar- Adds sweetness and helps to caramelize the carrots.
Butter & Olive Oil- Adds rich flavor and assists with coating and glazing the carrots.
Sea Salt- Just a touch to balance the sweetness.
Parsley- An optional garnish, but is is delish and brings a nice earthy flavor to the recipe.
Substitutions and Variations:
You can use baby carrots in place of the whole carrots, but they will need less time to cook. Keep a close eye on them in the oven and don't slice them in half. Just leave them whole.
If you want a maple taste, toss in a tablespoon of maple syrup.
How To Make Brown Sugar Honey Glazed Carrots:
Step 1: Preheat the oven to 400 degrees. Line a cookie sheet with foil and set aside. Wash the carrots then peel them. Cut off the points and stems, then slice each whole carrot into three pieces at an angle. Next, cut each piece in half long ways.
Step 2: Add the carrots into a large bowl and add in brown sugar, honey, melted butter, olive oil, and salt. Toss to make sure each carrot is coated in glaze.
Step 3: Place the coated carrots on the cookie sheet and spread them out into a single layer. Cook in the oven for 15 minutes.
Step 4: Remove the carrots from the oven and flip each carrot over tossing them in the glaze. Bake for another 10 to 15 minutes until nice and tender.
Step 5: Allow to cool for a few minutes before serving. Optional: Add parsley for garnish. Enjoy!
Expert Tip:
Cleaning the cookie sheet after baking: If the glaze gets between the foil and cookie sheet, pull off whatever foil you can, then allow it to soak in the sink with a bit of dish soap and water for about an hour. Then scrub with a brush or sponge to clean.

Absolutely, but you only want to heat them up until warm since they were already roasted. Cook at a lower heat around 325 degrees for 10 minutes or until hot. You could also pop them in the microwave. They will always taste better fresh, but you can reheat them.
Oven roasted carrots are absolutely delicious. With a glaze, they taste even better roasted as they get nice and caramelized. Yum! I like boiled carrots too, but it's just not quite the same as baked.
Storing the Recipe:
If you have leftovers, store in a sealed glass container in the fridge. They will last for up to three days. To reheat, preheat oven to 325 and place them back on a cookie sheet and cook for 10 minutes or until hot.

- 6 large carrots or 1 lb package
- 2 tablespoons brown sugar
- 1 tablespoon melted butter
- 1 tablespoon olive oil
- 1 teaspoon honey
- ¼ teaspoon sea salt
- Optional: 1 tablespoon minced parsley
Instructions
- Preheat the oven to 400 degrees. Line a cookie sheet with foil and set aside.
- Start by washing the carrots then peeling them. Cut off the points and stems, then slice each whole carrot into three pieces at an angle. Next, cut each piece in half long ways.

I have tried all different kinds of recipes for glazed carrots. Not to my liking. I want soft tender carrots glazed not dripping all over. My carrots turn out like shoe leather. What is better honey or maple syrup. I just want them to be glazed and fork tender not cut with a fork and bent like a "v". What am I doing wrong?

Have you tried this recipe yet? I would say to pull them out of the oven a little earlier and use a large versus smaller sized carrot. Shoe leather sounds like they are cooking too long at a too high temp. Honey and maple syrup both work, but I prefer honey for it's thicker texture. I hope that helps! Tara
