These Smoked Vegetables are seasoned and smoked to perfection on the Traeger. They prep in just minutes, then set it, forget it, and let the smoker do the work. Plus, these smoked veggies only take 45 minutes to make!
These are one of my favorite recipes to make in the Smoker, along with my Double Smoked Spiral Ham and Smoked Pork Butt. The vegetables have a subtle smoky taste that isn't over powering and the texture is amazing.
They're also great for cookouts paired with Smash Burgers or BBQ Pulled Chicken!

Ingredients:
Squash, Zucchini, Bell Peppers and Onion- A combination of vegetables that are in season in Summer and grill really well. You could also add in potatoes or carrots. I would stay away from vegetables that will turn mushy, like tomatoes.
Olive Oil- To coat the vegetables and has a high smoke point.
Spices-Cumin, Paprika, Chili Powder, Onion Powder, salt and pepper create a slightly spicy & flavorful blend of seasoning that tastes amazing on veggies.
Wood Pellets for the Smoker- The pellets you use are important when smoking. I really like the Lumber Jack brand. We've found that others don't produce as good of a quality as these and sometimes cause excess smoking in the pellet box.

Variations and Substitutions:
If you don't have a smoker, you can easily cook these in the oven at the same temperature and time. You won't get that smoky taste, but they will still be delish. Try this Pesto Vegetables recipe made on the skillet.
Want more vegetables in the mixture? Try adding some potatoes, sweet potatoes or carrots.
If you don't like any spice, you can leave out the Chili Powder.
Love spicy? Drizzle my hot honey over the top after the veggies comes out of the smoker.
How to Make Smoked Vegetables on the Traeger:
Step 1: Preheat the smoker to 350 degrees. Prepare a foil tray with vegetables.
Step 2: Pour in olive oil, garlic, cumin, paprika, chili powder, onion powder, salt and pepper. Toss with a spoon or use your hands to combine.
Step 3: Place the vegetable tray in the center of the smoker and close the lid. Cook for 20 minutes. Open the lid and stir the vegetables. Close the lid and cook for another 15 to 25 minutes until the squash is cooked, but not mushy.
Step 4: Sprinkle with additional salt and pepper to taste. Serve and enjoy.
Expert Tips:
Work quickly when opening the lid of the smoker. The temperature will drop quickly.
Cook until the vegetables are softened, but the zucchini and squash is still holding together. I like to cut the zucchini and squash into large chunks so they don't overcook.

Potatoes, onions, broccoli, asparagus, zucchini, squash, carrots and bell peppers are all great for the smoker.
I prefer using a throw away tin foil tray so you don't have to worry about vegetables falling through the grates. Cut the vegetables in large chunks and toss with olive oil and seasoning. Smoke at a 350 degree temperature for 35-45 minutes until softened.

Ingredients
- 2 zucchini, stems removed, quartered and cut into large chunks
- 2 squash, stems removed, quartered and cut into large chunks
- 1 small red onion, cut into chunks
- 1 red bell pepper, seeds and stems removed, cut into chunks
- 1 garlic clove, minced
- 3 tablespoons olive oil
- 1 teaspoon sea salt
- ⅛ teaspoon black pepper
- ½ teaspoon cumin
- ½ teaspoon paprika
- ½ teaspoon chili powder
- ½ teaspoon onion powder
Instructions
