I've been known to take a 40 minute trip to IKEA just for the Swedish meatballs, and these taste just like them (maybe even better)! This recipe couldn't get any easier and we end up with juicy slow cooked meatballs in the most amazing creamy sauce.

Ingredients:

Frozen Meatballs: Any of your favorite 20 ounce frozen meatballs will work for this recipe. I used the grass-fed frozen meatballs from Target and highly recommend them.
Beef Stock: Stock is made with the bones and always has richer flavors than beef broth. You will get a much better taste from stock versus broth in this recipe. Kitchen Basics and Costco Kirkland Brand Beef Stock are my go to brands.
Cornstarch: In a traditional stovetop sauce, we would use a butter and flour roux to thicken it. However, because we're thickening this recipe at the end of cooking, a cornstarch and water slurry is the easiest solution to thicken the sauce.

Substitutions and Variations:
- The frozen meatballs can be beef, pork, chicken or turkey.
- If you're not big on egg noodles, serve these over mashed potatoes. These would be excellent over these Garlic Cheese Mashed Potatoes, Mashed Potatoes with Boursin Cheese, or Red Skinned Mashed Potatoes.
How to Make Swedish Meatballs in the Crockpot:

Step 1: Into the slow cooker, add in beef stock, heavy cream, dijon mustard, Worcestershire, garlic powder, salt, and dried dill. Whisk together to combine.

Step 2: Pour in the frozen meatballs and cover the crockpot. Turn the temperature to low and cook for 6-7 hours.

Step 3: After 6-7 hours of cooking, mix together 1 tablespoon of cornstarch with 2 tablespoons of water and combine with a spoon.

Step 4: Pour the cornstarch slurry into the crockpot and stir. Add in the sour cream a spoonful at a time and stir to combine. Cover the crockpot again and cook on high for 1 hour, stirring half way through. About 20 minutes before the meatballs are finished, boil the egg noodles according to package instructions.

Step 5: Uncover the crockpot and stir well before serving.

Step 6: Serve in bowls with the egg noodles as a base and ladle over the meatballs and sauce. Top with fresh parsley and enjoy!
Expert Tips:
- Do NOT add the cornstarch into the crockpot without mixing it with water first. It will leave chunks in the sauce.
- I recommend boiling the egg noodles separately. It's hard to get them the right texture when cooking them in the crockpot and if you leave them in too long, they will be mushy.

Yes! These frozen meatballs can be cooked in the slow cooker on high for 4-5 hours.
Allow the meatballs to cool a bit before storing in a sealed container in the fridge. Eat within 2-3 days. Reheat the meatballs on the stovetop in a pot, over medium low heat, with a few tablespoons of beef stock to make the sauce nice and creamy again.
