This Creamy Broccoli Cheese Gnocchi is the ultimate cozy comfort food! It's a one pot dinner ready in under 30 minutes and one of my favorite meals in the Fall and Winter months. Tender broccoli and potato gnocchi are tossed into a parmesan cheddar cheese sauce for some serious flavor.
When I was a kid, I was obsessed with Broccoli and Cheese Baked Potatoes, so I decided to come up with a skillet version. The potato dumplings pair perfectly with the creamy cheese sauce and tender broccoli. It's incredible and impossible to stop eating.

Ingredients:

Gnocchi: Look for the kind near the pasta aisle. I don't recommend using a frozen version. The De Cecco brand is one of my favorites.
Chicken Stock: Stock is cooked with the bones for a richer flavor than chicken broth. I recommend the Kirkland's brand from Costco or All Kitchen brand.
Cheeses: It's important to shred the cheese from a block so that it melts well. Bagged/pre-shredded cheese has preservatives that don't melt well.
Broccoli: Use fresh. Frozen will be mushy and make the sauce green.

How To Make Broccoli Cheddar Gnocchi:

Step 1: In a large skillet or dutch oven over medium low heat, add in the butter and olive oil. Allow the butter to melt, then toss in onion, broccoli and salt and pepper. Cover and cook for about 6-7 minutes until softened, stirring a few times throughout.

Step 2: Toss in the garlic and cook for 60 seconds, then add in the gnocchi. Break the gnocchi apart if needed. It loves to stick together in the package. Pour in the chicken stock and heavy cream. Cover and cook for 6-8 minutes, stirring a few times throughout, until the sauce is thickened.

Step 3: Toss in the parmesan and cheddar cheese and stir to combine until melted.*It should only take a minute.

Step 4: Serve immediately and enjoy!!
Expert Tips:
- The broccoli should be divided into small florets, so that it can easily cook in the pan.
- Make sure the broccoli and onions are nice and softened before adding in the garlic and gnocchi.
- Shred the cheese from a block so it will melt well in the sauce.
- The gnocchi will cook quickly, 7-8 minutes max.

- 17 ounce package of gnocchi from the pasta aisle
- ¾ cup chicken stock
- ¾ cup heavy cream
- 1 cup parmesan cheese, shredded fine from the block
- 1 cup cheddar cheese, shredded from the block
