I'm pretty sure this recipe should be enough for at least 4 people, but I devoured a half by myself for lunch, then ate the other half for dinner. I promise you won't want to share it.

Ingredients:

Spaghetti Squash: Look for a 3-5 lb. sized spaghetti squash. If it's on the larger size, it may take a bit longer to bake in the oven.
Cheese: Shred both the mozzarella and the parmesan from a block for the best melt.
Pepperoni: The Hormel Cup 'n Crisp brand is my favorite because the pepperoni cups up and get soooo crispy.

Substitutions and Variations:
- If you want it vegetarian, leave off the pepperoni.
- Marinara sauce or any pasta sauce can be swapped out for the pizza sauce.

How to Make Pizza Stuffed Squash:

Step 1: Preheat the oven to 400 degrees. (1) Cut the spaghetti squash in half lengthwise. *This is the hardest part of the recipe. Be careful because it's difficult to cut. Scoop out the seeds and discard. (2) Brush with olive oil and season with salt and pepper. (3) Place the squash on a cookie sheet cut side down. (4) Bake for 40-45 minutes until tender, then flip over.

Step 2: Use a fork to shred up the inside of the squash. Spoon over ¼ cup of pizza sauce over the inside of each of the squash and spread to cover. Top with mozzarella, parmesan, then spices. Cover with pepperoni. Bake for 10-13 minutes until the cheese is melted.

Step 3: Remove from the oven and allow to cool for a few minutes. Serve and enjoy!
Expert Tips:
- Make sure the squash is nice and tender before adding the toppings. It may need to be baked more. Bake in 5 minute increments.

Ingredients
- (1) 3-5 lb spaghetti squash
- 1 tablespoon olive oil
- ½ teaspoon salt
- ⅛ teaspoon pepper
- ½ cup pizza sauce
- ¾ mozzarella cheese, shredded
- ½ cup parmesan cheese, shredded fine
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- ¼ teaspoon red pepper flakes
- 14-16 pepperonis (preference for hormel cup 'n crisp)
