Creamy Italian Sausage Spinach Gnocchi

This Creamy Italian Sausage Spinach Gnocchi is quick and delicious. The recipe is the perfect weeknight meal and only requires 20 minutes & ONE POT!

This dish is packed with flavor! It is creamy and delicious and honestly, you won't even know it's not pasta.

Italian Dinners always go over well in my house. I absolutely love them and if I knew I wouldn't blow up, I would probably eat Italian food for every meal. Oh, and Mexican food. I could never live without either of these.

Is Gnocchi Pasta or Potato?

Gnocchi is a potato! It is actually made from mashed potatoes, flour and egg to form little, delicious dumplings. Gnocchi goes way back and if you want to nerd out on the topic like I did, check out The History of Gnocchi article from Saveur.com

What does gnocchi taste like?

Gnocchi is on the bland side, which is why it pairs so wonderfully with sauces. I like to cook mine in a cream sauce, like in this recipe, rather than boiling them in water. The gnocchi picks up such good flavors this way.

What to Pair With This Recipe

This recipe is quite filling itself, but if you are looking for more options, try a simple salad like my wedge salad recipe or for a decadent addition, try my garlic cheesy bread. A glass of white wine, like Chardonnay, goes wonderfully with this meal too.

The Ingredients

Gnocchi- Italian Potato Dumplings that cook in minutes and are so satisfying. We are using a pre-made, dry, store bought gnocchi from the pasta isle.

Mild or Sweet Italian Sausage- The perfect protein to add in, that packs so much flavor

Roasted Red Peppers- Optional, but they make the recipe much more colorful with just a touch of smokiness

Baby Spinach- Greens to toss in for color and nutrition

Garlic and Onion- Provides the dish with classic Italian flavor

Parmigiano Reggiano- My favorite nutty cheese that turns this sauce into velvet

Heavy Cream and Chicken Stock- The base of the sauce

Olive Oil- Just a touch to assist with flavor and cooking our sausage and onions

NOTE: You will notice that I don't add salt to the recipe. This is due to the saltiness of the cheese and chicken stock. If you need a pinch, certainly add some, but do taste it at the end of the recipe before adding, to ensure you don't make it too salty!

Easy Steps for this Simple Meal
  1. Heat a dutch oven or deep skillet to medium heat. Add in olive oil and allow it to heat up for a few minutes. Add in the Italian Sausage and onions. Cook until no longer brown (about 8 minutes), breaking up the sausage a bit as it cooks.

2. Toss in the garlic, gnocchi, chicken stock, and heavy cream. Stir until combined. Cover and cook for 3 minutes.

3. Place the roasted red peppers and spinach into the pot. Cover again for 3 minutes.

4. Uncover, turn off the heat completely and add in the parmigiano-reggiano cheese and a pinch of black pepper. Stir well. The cheese will melt instantly and this creamy meal is ready to serve!

Description

This Creamy Italian Sausage Spinach Gnocchi is quick and delicious. The recipe is the perfect weeknight meal and only requires 20 minutes & ONE POT!


Ingredients

Scale
  • 1 tablespoon olive oil
  • ½ cup yellow onion, diced
  • 1 garlic clove, minced
  • 16 ounce package Mild or Sweet Italian Sausage
  • 16 ounce package pre-made dry gnocchi, from the pasta isle
  • ¼ cup jarred roasted red bell peppers, cut into skinny strips (optional ingredient)
  • 2 ounces of baby spinach
  • ½ cup heavy cream
  • ½ cup chicken stock
  • 1 cup parmigiano reggiano cheese (Buy the real stuff or it will not turn out as good)
  • pinch of black pepper

Instructions
