These Oven Baked Italian Sausages with peppers and onions are so simple and delicious. It's all oven baked on a sheet pan for a super easy dinner ready in less than 45 minutes!
This Sausage and veggie recipe is perfect for those weeknights, where you are lacking the energy to cook, but still got to get it done. Prep time takes about 10 minutes, then pop it in the oven for baking.
On lazy days, I will just whip up a simple white rice in the rice cooker, but if you have extra time, consider making my coconut rice, broccoli orzo, or garlic risotto to pair with the sausage, peppers and onions.
You could also make this sausage with pasta and my homemade marinara sauce or gnocchi with marinara, which would be amazing!

Ingredients:
Italian Sausage- I personally like using pork sausage for this recipe because it stays really juicy because of the fat content and doesn't dry out as easy as chicken or turkey sausage does. This brand was good, but I prefer getting my Italian Sausages straight from the butcher shop when I can.
Bell Peppers-I prefer using a few different color bell peppers for variations in color and flavor. The reds always taste sweeter to me and they are so good!
Yellow Onion-Chosen for sweetness and they cook down really well in the oven.
Olive Oil, Garlic and seasoning- Olive Oil coats the veggies to help them cook in the oven, without drying out and burning and brings out their natural sweetness. The garlic and seasoning helps add additional flavor as well!
Substitutions and Variations:
If you're not big on pork sausage, you can use turkey or chicken sausage instead.
Want more veggies? Add in tomatoes, zucchini or squash too. Just make sure to slice the zucchini and squash thinly so it cooks throughout.
You can use any of your favorite bell peppers for this recipe.
Prefer the taste of red onion over sweet yellow, go for it.

How to Make Baked Italian Sausage with Peppers and Onions:
Step 1: Preheat the oven to 375 degrees. Season Italian Sausage with ½ teaspoon salt and ¼ teaspoon black pepper. Set aside.
Step 2: In a large bowl, add the peppers, onions and garlic, along with 1 tablespoon of olive oil, the remaining salt and pepper, garlic powder, onion powder and oregano. Toss to combine.
Step 3: In a skillet over medium heat, add in a tablespoon of olive oil and allow it to heat up. Sauté the Italian Sausage for 2-3 minutes on each side, just to sear the exteriors. The inside will still be raw.
Step 4: Line a cookie sheet with foil. Add the Sausages to one side and the onion and pepper mixture to the other, spreading out into a layer so the veggies can cook evenly. Bake in the oven for 15 minutes, then flip the sausages and give the vegetables a toss. Cook for another 5 to 10 minutes until the internal temperature reaches 165 degrees.
Step 5: Remove from oven and tent with foil for a few minutes before serving.
Step 6: Serve alone, or over rice, pasta or on a hoagie roll. Lots of options here..Enjoy!

- Make sure the sausage's internal temperature reaches 165 degrees before removing from the oven.

This internal temperature should be at least 165 degrees when it is fully cooked.
After searing in the pan for 2 to 3 minutes on each side over medium heat, it took another 20 minutes in a 375 degree oven for mine to cook fully. It depends on the size of the sausages too. Bigger sausages will take longer to cook.
Storage:
Store the leftovers in a sealed container in the fridge for up to 3 days. To reheat, simply place back on a cookie sheet and cook at 375 degrees until the sausage is hot inside.
