This is a decadent dinner with tender and juicy filet mignon in a garlic buttery sauce. The potatoes are crispy and cooked in beef tallow for extra flavor. It's an absolute must try recipe and my kids beg me to make this one.

Ingredients:

Beef Tallow: It's high burning point and rich taste makes it perfect for frying potatoes. I'm seriously obsessed with it and rarely use seed oils for frying potatoes anymore.
Filet Mignon: I recommend Choice or Prime Filet Mignon for a higher quality option.
Potatoes: I used Yukon Golds for this recipe, which crisp up well and are rich and buttery.

Substitutions and Variations:
- The Potatoes can be fried in vegetable oil, but I highly recommend beef tallow for taste. I don't recommend using butter because it will burn in the pan because of it's lower burning point.
- If you prefer ribeye over filet, feel free to swap it out.
- Russet potatoes are another option that works well for frying.

How to Make Steak Bites and Potatoes:

Step 1: Cut the steaks into 1-2 inch pieces, trying to make them similar in size so that they cook evenly in the skillet.

Step 2: Transfer the steak cubes into a large bowl. Pour over olive oil, Worcestershire sauce, ยฝ teaspoon salt, thyme and rosemary. Toss to coat, covering each piece of the steak with the mixture. Allow to sit at room temperature when cooking the potatoes.

Step 3: In the skillet over medium high heat, pour in the beef tallow and allow it to heat up for a moment. Transfer the cubed potatoes into the skillet, trying to keep them in an even layer in the pan. Allow to sautรฉ until golden brown (4-6 minutes), then flip and cover for a few minutes. Uncover, and stir every few minutes until crispy on the outsides with a soft center. Note: It took about 13 minutes total for mine to cook, but it will depend on size of potatoes and heat of the skillet.

Step 4: Transfer the potatoes to a paper towel lined plate and season with ยฝ teaspoon of salt.

Step 5: Add the steak bites into the empty pan over medium high heat and cook for 2-3 minutes (for well done 4 minutes), then flip. Add in the butter to one side of the pan and toss in the garlic. Cook the steak for another 2-4 minutes until the desired temperature (see guide below in post). Note: I cooked the steak bites about 2-3 minutes on each side for a medium pink center.

Step 6: Serve the steak beside the potatoes and make sure to spoon some of the extra garlic butter from the pan over the steak bites. Enjoy!
Expert Tips:
- Make sure the potatoes are pretty dry (dab with paper towels if needed) before adding them into the hot beef tallow.
- You want to keep a higher heat on both the potatoes and steak bites, about medium high on the stovetop. If you notice a lot of popping of grease, drop it down a bit.
- Allow the steak to sit on the countertop in the marinade when the potatoes are cooking. It's better to have the steak closer to room temperature versus adding right from the fridge.

Guide to Cooking Steaks:
An internal thermometer makes cooking steak fool proof. Simply insert the probe into the center of the steak for an instant read. Temperatures are as follows:
- Rare (very red center): 125 degrees
- Medium Rare (red center): 130 degrees
- Medium (pink center): 135-140 degrees
- Medium Well (slightly pink center): 145-150 degrees
- Well done (brown center) 155+ degrees

- 1 tablespoon olive oil
- 1 tablespoon Worcestershire Sauce
