Ingredients:

Hoagie Rolls: Martin's rolls are always a great choice and easy to find at most grocery stores. Any sub rolls work for this recipe or you can buy one of those fat French bread loaves and slice it open.
Cheese: I like a combo of mozzarella and parmesan for this recipe. Shred it from a block if you have time for a much better melt.
Sausage: Ground Italian sausage or county style sausage both work well.
Pepperoni: The Cup 'n Crisp Pepperonis by Hormel are our favorite because they do just what they say "cup up and get really crispy."
Balsamic Glaze: Not a requirement, but I love the little bit of sweetness and acidity that it adds as a finishing touch. Make sure to use glaze, not balsamic vinegar.
Cherry Peppers: One of my favorite pizza toppings is cherry peppers or peppadew piquante peppers. I'm not big on spicy, so I always get the mild ones. You can usually find these near the olives at the grocery store.

Substitutions and Variations:
- If you have sausage links, just remove the casings and discard and it's the same as ground sausage.
- Add different veggies, like mushrooms or bell peppers. Olives, quartered artichoke hearts, and pineapple are always a great topping too.

How to Make Homemade Pizza Subs:

Step 1: Preheat the oven to 425 degrees. Place a medium sized skillet on the stovetop over medium heat. Cook the ground sausage in the skillet, breaking it up as it cooks, until no longer pink. Note: Don't overcook it, as it will continue to cook on the subs in the oven. Pour the sausage from the skillet onto a paper towel lined plate to remove excess grease and set aside.

Step 2: Open up the sub rolls and place on a cookie sheet. Spread on pizza sauce on both open sides, then top with a nice sprinkle of mozzarella, then parmesan cheese. Top the bottom half of the sub with all the pizza toppings you want. Note: If you put toppings on the top portion, it is difficult to close after baking. Add the cookie sheet to the oven with the subs open and bake for 12-14 minutes until golden brown with nice crisp toppings.

Step 3: Remove from the oven and top with balsamic glaze.

Step 4: Fold the top portion of the sub over. Serve hot and enjoy!
Expert Tips:
- Shred the cheese from a block for the best melt.
- I like to pre-cook the sausage ahead of time before adding to the subs. I know some people add it on raw, then bake, but I'm weird about raw meat touching things.
