I could eat baked potatoes everyday. These are so perfectly cooked on the smoker and they are as easy as brushing on butter, sprinkling on salt and wrapping up in foil.
Cooking these potatoes in the smoker also keeps the heat out of the house, which is always a plus in Southern Summers. We're constantly cooking outside when the humidity comes our way.

Ingredients:
Russet Potatoes: For the classic baked potato that we all know and love. I like the bigger potatoes for this recipe and you want to get ones of similar size, so they all finish smoking around the same time. Russets have a nice thick skin that makes them great for baked potatoes.
Butter: Brushed onto the outside of the potatoes for a savory taste. I recommend Irish Grassfed butter, like Kerrigold, for its rich flavor. I also prefer salted.
Sea salt or flake salt: To add flavor and seasoning. I prefer sea salt after the butter, then I like to top with thicker flaky salt before serving.

Substitutions and Variations:
Feel free to add extra seasonings to the outside of the potato, like chili powder, garlic salt, black pepper, etc.
You can use any flavor of pellets for this recipe.
Butter can be substituted with olive oil, but I prefer the taste of butter with baked potatoes.
If you don't have a smoker, you can follow the same recipe instructions with your oven. Place the tin foil wrapped potatoes on a cookie sheet lined with foil to prevent butter from leaking out and getting really smoky in the house.

How to Make Smoked Baked Potatoes:
Step 1: Turn the smoker to high heat (450 degrees) and preheat. Make sure the pellets are full.
Step 2: Prepare 4 squares of tin foil to wrap each potato. Brush melted butter over potato and sprinkle entire surface with salt.
Step 3: Tightly wrap the potato in foil so the butter doesn't leak out. Repeat with all 4 potatoes.
Step 4: Place the foil wrapped potatoes on the smoker and close quickly to prevent big temperature drops. Smoke for 60-70 minutes until the potatoes are tender all the way through. Test with a fork if needed.
Step 5: Allow the potatoes to cool for 5-10 minutes. Unwrap and sprinkle with additional salt if desired.
Step 6: Slice open and top with bacon, sour cream, butter, green onion, and cheese or whatever your favorite baked potato toppings are. Serve and enjoy!

- Fill the pellet box full of pellets prior to starting the smoker so it doesn't run out midway through smoking the baked potatoes.
- Wrap the potatoes well in foil to avoid the butter from leaking out into the smoker, and place open side up on the smoker grates.
- The temperature of the smoker may range from 400-450 degrees during cook time. If it's closer to 400 most of the time, keep the potatoes cooking for about 70 minutes.
- Allow the potatoes to cool for a few minutes on a cookie sheet before opening.

At high temperatures between 400-450, it will take between 60 and 70 minutes. Lower temperatures around 250 will take closer to 2-2.5 hours. It also depends on the size of the potatoes. Larger ones will take longer to get tender throughout.
Cut them into small squares and fry up with bacon and onions for breakfast or chop up for breakfast burritos with egg and sausage. Top with veggies and cheese for an easy lunch.
Allow the potatoes to cool completely, then place in a sealed container in the fridge and use within 3 days.
