Fried rice is a staple in Asian cuisine and for good reason..it's delicious! This recipe combines day old white rice with vegetables and soy sauce for an amazing meal.
I love fried rice because you can use it as a side dish next to these Thai Shrimp Tacos or Asian Turkey Meatballs, or make it a meal and sprinkle in some sautéed chicken or bbq shrimp!

The Ingredients:
White Rice- The rice needs to be a day old and stored in the fridge overnight. This helps to get some of the moisture out of the rice, so it gets nice and crispy when fried on the hot griddle. The best type of rice for fried rice is highly debated. I used a long grain organic white rice and I was super happy with the result. I've read that short grain rice, like sushi rice can result in a mushy texture, but I haven't tested it in this recipe.
Carrots, Onions, Celery- The vegetables that add crunch into the fried rice. When slicing the vegetables, you want everything small or thin, so it can cook quickly on the griddle.
Egg- The eggs are scrambled and chopped into small pieces and incorporated throughout the rice. They add texture and protein!
Sweet Peas- A classic ingredient in fried rice and adds a burst of sweetness in every bite.
Sesame Oil and Soy Sauce- For the Asian flavor and a bit of saltiness.
Substitutions and Variations:
If you can't find long grain white rice, use Jasmine rice instead.
Any of the vegetables can be left out of this recipe or you can add in more vegetables, like sliced red bell pepper or cabbage.
Not big on the taste of sesame oil? Because so little is used in this recipe, it's not very strong in flavor, but you can substitute it with a neutral oil like Vegetable Oil or Canola Oil.
You can substitute the soy sauce with coconut aminos.

How to Make Blackstone Fried Rice:
Step 1: Turn two burners of the blackstone griddle to medium high heat. Allow the burners to get hot, then pour on sesame oil and one tablespoon of butter. Add the carrot, celery and onion over the oil and butter and toss. Cover and cook for 4 to 6 minutes until softened, stirring every few minutes.
Step 2: Add in the garlic and peas and cook for 60 seconds then push over to the cool side of the grill.
Step 3: Add the eggs to the griddle and use the blackstone spatulas to chop it into pieces. Once it is cooked, move to the cooler side of grill with the vegetables.
Step 4: Add remaining tablespoon of butter to the hot portion of the grill and allow it to melt. Pour over the cooked rice, and toss in the butter and cook for about 3 minutes. Toss the vegetables and egg back into the rice and pour over the soy sauce. Use the spatulas to continue moving the rice, so it all gets fried and toasted, about 4 to 5 minutes.
Step 5: Remove from the griddle and top with green onions or chives. Serve and enjoy!
Expert Tips:
- Take time to slice and dice the vegetables. You want the carrots and onions diced very small and the celery finely sliced, so that they cook quickly.
- Cook the vegetables until translucent and softened. They shouldn't be browned or burnt. If they start to burn, drop the heat, push the vegetables to a cooler part of the griddle and add in a tablespoon of vegetable oil to the veggie mixture.
- When frying the rice, spread it out in a thin layer over the griddle and let it cook for a minute then toss and do it again. This makes sure all the rice gets nice and crispy.

If you are using a pan or wok, first cook the vegetable and remove to a plate, cook the egg and remove to a plate, then the rice. Add the vegetables and egg back to the rice and finish cooking.
For the best crispy fried rice, the moisture needs to draw out of the rice. This happens over time and if you try to fry freshly cooked rice, it will be too mushy. The rice needs to sit in the fridge for a minimum of 8 hours for the best texture.
Storage:
Store in a sealed container in the fridge for up to 3 days.

- 1 teaspoon sesame oil
- 2 tablespoons salted butter
- ½ cup yellow onion, diced fine
- 1 carrot, peeled and diced fine
- 1 celery stalk, thinly sliced on a bias (at an angle)
- 1 garlic clove, minced
- ½ cup frozen sweet peas
- 2 eggs, whisked
- 3 tablespoons soy sauce
- 1 tablespoon finely sliced chives or green onions
