Bunny Bait Easter Chex Mix is such a fun treat for the Easter Holiday. It's made up of Chex & Cheerios coated in white chocolate with marshmallows, pastel m&ms, and pretzels. A kid and adult favorite, and ready in under 30 minutes with no baking required.
We had good friends over this weekend and we devoured this bowl in an afternoon. They have 3 little kids and it was a treat they all really enjoyed! I love all the pastel colors too.

Ingredients:
White Chocolate Melting Wafers: I highly recommend the Ghirardelli Brand for its superior taste over cheaper brands. The wafers always melt better than chocolate chips and in my opinion, are easier to work with. The chocolate stays melted longer, so that you can really cover all of the cereal.
Cheerios: Honey Nut Cheerios are my favorite for this recipe because the sweetness tastes really good under the white chocolate layer.
Pretzels: I really like the strawberry yogurt pretzels for this recipe because they're pink. These were a mini version, which really went well with the mix.

Substitutions and Variations:
- The Rice Chex can be substituted with Corn Chex, if needed.
- I really like white chocolate for the lighter Spring color, but you could also do milk chocolate and lighten it with a cup of powdered sugar. Make sure to add the powdered sugar and toss the mix when the chocolate is still wet in the bowl. Check out this Muddy Buddies recipe.
- Don't love m&ms? Use the pastel milk chocolate Cadbury eggs instead.
- The pretzels can be plain yogurt, strawberry or blueberry. Whatever color you prefer is great!

How to Make Bunny Bait:
Step 1: In a large bowl, add in Rice Chex, Cheerios and Mini Marshmallows and stir to combine.
Step 2: Add the melting wafers to a double boiler or in a microwave safe container and melt according to package instructions. Note: Make sure NOT to get any water in the mixture or it could seize up.
Step 3: Melt the white chocolate until completely smooth.
Step 4: Pour the white chocolate over the Chex mix and gently stir to coat the entire mixture.
Step 5: Line the countertop with a long sheet of parchment paper. Pour the mixture out on the parchment paper and allow it to harden. It takes about 10-15 minutes.
Step 6: Transfer the mixture into a serving bowl and pour in the pretzels and m&m's. Toss to combine. Serve and enjoy!
Expert Tips:
- Don't get any water, not even a droplet, into the melting wafers or it could seize (harden) the chocolate.
- Try to spread the chocolate coated mixture out into a flat layer on the parchment paper to allow the chocolate to harden faster.

Storage:

- 2 cups Honey Nut Cheerios cereal
- 1 cup mini marshmallows
- 10 ounce White Vanilla Melting Wafers, preference for Ghirardelli
- 1 cup Strawberry yogurt pretzels, mini version if you can find them or regular is fine
- 1 cup pastel m&m's
