Get ready for the easiest Summer dessert with this Strawberry Icebox Cake! It's a no bake recipe and features alternating layers of whipped cream and Oreos with a fresh Strawberry topping. It's only 5 ingredients and takes about 20 minutes to prep, then pop it in the fridge overnight.
I'm not going to lie, I had a couple recipe fails at first with this recipe.
- The first round, I accidentally put it in the freezer overnight instead of the fridge, which left me with a frozen block.
- Second attempt: I layered the strawberries in with the whipped topping and when I pulled it out from the cake pan it had watery strawberry juices all in the top of the whipped cream. Eww!
- Third round turned out perfect, which meant fridge (never freezer) overnight to soften the cookie layers and adding fresh strawberries right before serving.
The final results turned out so good and I'm pretty sure it's about the easiest dessert you can make. If you love cookies and cream ice cream, this is totally up your alley.

Ingredients:

Oreos: I recommend the regular Oreos, not double stuffed or thin, for this recipe. They are super easy to separate into two cookies and soften up well.

Substitutions and Variations:
- The homemade whipped cream can be substituted with cool whip, but I'm not a huge fan of the taste.
- The Oreos can be swapped out with other cookies, like Nilla Wafers, or you can use graham crackers for icebox cakes.

How to Make Strawberry Icebox Cake:

Step 1: Line a 10 inch bread loaf pan with plastic wrap, making sure it overhangs on both sides.

Step 2: Separate each of the Oreo cookies into 2 pieces.

Step 3: Into the stand mixer with whisk attachment, or a bowl if using hand mixer, add in the heavy cream, vanilla and powdered sugar. Whip on medium low speed until you get stiff peaks and the whipped cream holds in place well. Note: It's better to over mix than under mix in this recipe. You want it really firm for layering.

Step 4: It's time to assemble our cake. Into the bottom of the loaf pan over the plastic, spread out about a heaping cup of whipped cream to cover the bottom of the pan. Top the whipped cream with the split Oreo cookies in a single layer without overlapping too much. Spread over another cup of Whipped Cream, then Oreo, then Whipped Cream, and finish with an Oreo Layer. *If you have any whipped cream topping left, store it in a container in the fridge and you can use it to top the cake tomorrow.

Step 5: Cover the loaf pan with more plastic wrap and place in the fridge for at least 6 hours, preferably overnight.

Step 6: Unwrap the loaf pan and run a butter knife between the cake and pan on the top and bottom (where we don't have it lined with plastic wrap). Put the serving dish over the top of the loaf pan and flip it over so it lands onto the serving dish. The loaf pan should easily slip off. Remove the plastic wrap. Top the whipped cream layer with freshly sliced or diced strawberries. If desired, top with leftover whipped cream and I crushed up a few Oreos to make it pretty. Serve in slices and enjoy!
