This is one of those weird recipes that I put together and it actually came out amazing. I started with a Summer version using peaches in this Peach Crumble Cake, then decided why not try it with apples for Fall?

Note: The picture shows 5 tablespoons of butter. It looks like a few tablespoons, but it's the wide sticks.
Cake Mix: I love the White Super Moist Cake Mix from Betty Crocker. It's really light and fluffy, which is great for this recipe.
Apples: Use fresh apples, peeled and diced into small cubes. I highly recommend Honeycrisp or Pink Lady apples for this recipe.

Substitutions and Variations:
- Any boxed version of white or yellow cake mix works in this recipe, just be sure to check the instructions and follow them for the actual cake portion.
- You can swap out the Honeycrisp apples for another variety, but Honeycrisp or Pink Lady apples are my favorite for their crisp texture and sweetness.
How to Make Apple Cobbler from Cake Mix:

Step 1: Preheat the oven to 350 degrees. Peel and dice the apples into 1 inch cubes.

Step 2: Add the apples to a large skillet on the stovetop over medium low heat. Sprinkle over 1 tablespoon granulated sugar, 1 teaspoon of lemon juice, 1 teaspoon ground cinnamon, and ¼ teaspoon ground nutmeg. Stir and cook for 8-12 minutes, until the apples are tender and softened. Turn off the heat in the skillet.

Step 3: Prepare the cobbler crumble topping by whisking together the flour, brown sugar, 2 tablespoons granulated sugar, and 1 teaspoon cinnamon until combined.

Step 4: Cut the cold butter into about 20 smaller pieces and add into the cobbler crumble topping. Use your fingers to pinch the mixture together until it resembles wet sand.

Step 5: Grease a 9x13 dish with vegetable oil or spray or butter. Prepare the cake mix according to package instruction. The Betty Crocker Cake Mix says to whisk together cake mix, 3 eggs, ½ cup vegetable oil and ¾ cups water. Pour the cake mix into the 9x13 dish and spread to cover the bottom of the dish. Add the fresh apples over the top of the cake mix, making sure there will be some in every bite. Lastly, sprinkle the apple cobbler crumble topping over the apples. It should cover the whole surface. Bake for 27-31 minutes until the cake is fully cooked.

Step 6: Test the cake with a toothpick to make sure it's fully cooked. When removing, the toothpick should only have crumbs, not wet batter. Allow to cool 5-10 minutes before slicing.

Step 7: Cut into squares and serve with a scoop of vanilla ice cream, if desired. Enjoy!
Expert Tips:
- Make sure to cook the apples until tender. They will bake more in the oven, but you don't want them crunchy when they come out.
- For the crumble topping, you want the butter to come straight out of the fridge. It should be cold and hard still.

- 5-6 fresh medium sized Honeycrisp Apples (5 cups chopped)
- 1 tablespoon sugar
- 1 teaspoon lemon juice
- 1 teaspoon ground cinnamon

Crumble Topping:
- ½ cup all purpose flour
- 2 tablespoons granulated sugar
- ¼ cup brown sugar, packed
- 1 teaspoon ground cinnamon
- 5 tablespoons cold salted butter
Cake Mix Layer:
- 1 box Betty Crocker White Cake Mix (14.25 ounce box)
- 3 eggs
- ½ cup vegetable oil
- ¾ cup water
- 1-2 teaspoons of vegetable oil, cooking spray or butter to grease the 9x13 dish
- Optional: Vanilla ice cream for serving
