This is one of those recipes I prep almost every Sunday during the entire Spring and Summer season. It's fantastic for meal prepping and tastes even better the next day.
I find preparing lunch for just myself kind of annoying, and love to just grab something pre-made from the fridge. Plus, it gets bonus points for high protein!

Ingredients:
Rotisserie Chicken: Grab a store-bought version for the easiest option. It's always tender and tastes really fantastic in chicken salad. If you buy a giant sized Chicken from Costco, you may need to add a bit more mayonnaise (a few tablespoons) to bind the ingredients.
Pickles: I love the classic Claussen Dill Spears or Grillo's Pickle Spears for this recipe. I use these over relish because I like chopping them a little larger for that crunch, and the flavors are a bit different.
Fresh Dill: I highly recommend fresh over dried for this recipe for that crisp taste.

Substitutions and Variations:
- Want more pickle flavor? Double up the pickles and fresh dill.
- Out of fresh dill? Use a teaspoon of dried dill and add more to taste.
- Add a little heat with a few dashes of hot sauce or crushed red pepper flakes.

How to Make Dill Pickle Chicken Salad:
Step 1: Remove the skin from the rotisserie chicken and pull all the meat from the bones and place on a cutting board. Dice up the chicken into finer pieces.
Step 2: Into a large bowl, add in the diced chicken, onion, celery, pickle, dill, salt, pepper, mayonnaise, and dijon mustard. Stir until fully combined. If the chicken is warm, store in the fridge for at least an hour. If it's cold, you can eat it right away or chill it for a half hour.
Step 3: Serve and enjoy! You can top this chicken salad on crackers or celery, make a sandwich with bread and lettuce, or add a scoop over a bed of greens.
Expert Tips:
- Make sure to really check the rotisserie chicken for small bones, as they can easily end up in the mixture.
- If the chicken is warm when you add it in, allow the chicken salad to sit in the fridge for an hour before serving. We want it nice and chilled.
