Ingredients:

Ground Beef: I prefer 85/15 lean to fat ratio of ground beef because it stays juicy, but isn't too greasy.
Cheddar Cheese: Shred the cheese from a block for the best melt. Don't buy pre-shredded cheese because it has anti-caking agents that don't melt well.
Tortillas: You need flour tortillas because corn will break apart. The fajita size works really well for taquitos.
Vegetable Oil: Vegetable oil is best for this recipe for it's high burning point. Avocado oil is a good second choice.

Substitutions and Variations:
- Cheddar cheese can be substituted with Monterrey jack, Cotija, or Pepper jack Cheese.
- If you want to do a chicken version, you can remove the skin from a rotisserie chicken and shred the meat.

How to Make Beef Taquitos:

Step 1: In a large skillet over medium heat on the stovetop, sauté the ground beef until no longer pink, breaking up the meat as it cooks. Sprinkle and stir in the seasoning. Turn off the heat once it's nice and browned.

Step 2: (1) Hold each flour tortilla in your hand and add in a few tablespoons of beef and top with a sprinkle of cheese. (2) Roll the tortilla into a cylinder shape. (3) Place seam side down onto a cutting board so it holds the ingredients inside. (4) When frying, grab each one with tongs and place it seam side down into the skillet.

Step 3: Pour the oil into a skillet over medium heat and allow it to heat up for a few minutes on the stovetop. The oil should be shimmering before adding in the taquitos. Working in about 3 batches, place about 4-5 taquitos carefully into the pan seam side down and fry for about 1 minute, then carefully flip over, keeping the taquitos touching so that the tortilla doesn't open up and dump ingredients. Fry for another minute. Transfer to a plate and repeat with the next two batches.

Step 4: Serve with lime aioli or sour cream and enjoy!
Expert Tips:
- Make sure the oil is hot enough before adding in the taquitos or it will soak into the flour shells.
- The hardest part of this recipe is keeping the flour tortillas closed while frying. Place them seam side down in the pan, and when flipping keep them close to each other to avoid any unwrapping.

- 1 lb ground beef (preference for 85/15)
- 1 tablespoon taco seasoning
- 15 flour tortillas, fajita size *about 6 inches
- 8 ounce cheddar cheese block, shredded
- ⅓ cup vegetable oil
Instructions
- In a large skillet over medium heat on the stovetop, sauté the ground beef until no longer pink, breaking up the meat as it cooks. Sprinkle and stir in the seasoning. Turn off the heat once it's nice and browned.
