This Egg Bites Recipe combines bacon and gruyere cheese for a quick and delicious breakfast. These are a Starbucks copycat recipe and they are baked in a muffin tin to make the recipe extra easy. Like my Asparagus Puff Pastry and Brioche French Toast Casserole, these egg bites are ideal for brunch!
Crispy bacon & cheese make these egg bites really over the top delicious! It's like a mini frittata-the perfect bite sized breakfast.
Have you ever made eggs to order for a crowd? It drives me nuts because everyone wants their eggs cooked a different way. Keep it simple and serve these mini egg bites. This is my favorite way to prepare eggs when I'm serving a crowd for breakfast or brunch.

Eggs- The main ingredient and I wish the picture above showed how blue our eggs are. We have two Ameraucana chickens in the backyard and they lay blue eggs. It's super cool! Eggs are full of protein and a great choice for a healthy breakfast.
Milk and Sour Cream-Adds creaminess and a fluffy texture to the eggs.
Gruyere Cheese-A type of Swiss cheese that melts into a creamy cheese.
Monterey Jack Cheese- A mild cheese known to have great melting properties, just like Gruyere.
Bacon-Original or Applewood bacon are used in this recipe for a crispy, salty topping that pairs wonderfully with the cheeses.
Salt and Pepper- Just a touch for seasoning and flavor.
Substitutions & Additions for the Recipe:
Are you vegetarian or someone you're serving is? Leave the bacon off entirely or just leave a few egg bites bacon free.
Looking to add in some veggies? Chop up ⅛ cup of fresh spinach and add into the egg mixture. You could also sauté a few tablespoons of onions, bell peppers or mushrooms with the bacon to add to the topping.
Can't have milk? Leave it out of the recipe. They might not get quite as fluffy, but they will still taste great.
Not a fan of Monterey Jack or Gruyere? Cheddar Cheese would be great in it's place too!
How to Make Egg Bites Recipe:

Here are the Step by Step Instructions for Bacon Gruyere Egg Bites.
Step 1: Preheat oven to 325 degrees.
In a medium sized skillet, sauté bacon on medium low heat until nice and crispy. I like to cut mine with scissors into small pieces before frying. It just seems to get crispier like this.
Transfer to a paper towel and allow it to cool.
Step 2: Into a large bowl or a pyrex dish (my preference for having a spout), whisk together the eggs gently until blended. Pour in sour cream, milk, salt and pepper and half of the cheese, roughly ¼ cup of each cheese. Whisk again until fully combined.
Note: You don't want to over whisk because it could take some of the fluffiness out of the eggs.
Step 3: Chop the bacon up even finer and set it aside with the remaining cheese.
Step 4: Spray a 12 count muffin tin with cooking spray or wipe each muffin cup generously with vegetable oil. Pour the egg mixture just a little over half way full into each muffin cup.
Step 5: Bake for 10 minutes. Carefully pull the muffin tin from the oven and top with remaining cheese. The eggs will still be gooey.
Step 6: Then add the bacon.
Step 7: Bake for an additional 10 to 15 minutes. Shoot for 10 minutes if you like your eggs on the undercooked side and 15 if you like them well done. I pull them out after 13 minutes.
Allow the egg bites to sit and cool for 10 minutes before running a butter knife around the outside of each one and removing them.
Serve warm and enjoy!
- Use regular bacon, not thick, or it won't get as crispy.
- Avoid over whisking the eggs.
- The eggs may sink a bit and this is completely normal! The eggs bites fill with air in the oven, then deflate a little once they cool.

Yes! Egg have high protein, healthy fats, as well as several vitamins and minerals. This is a great way to start your day. If you are looking for a healthier version of this recipe, consider adding in some veggies, like mushrooms, onions, or spinach and leaving out the bacon and cheese.
Egg bites cook between 20 to 25 minutes in a 325 degree oven. It really depends how you like your eggs cooked, on when to pull them out of the oven. I would not go over 25 minutes or they may get overcooked and rubbery tasting.

Storage and How Long Egg Bites Stay Good:
Store the leftover egg bites in the fridge in a sealed container. You can eat these cold or heat them up in the microwave, air fryer or oven for a quick on the go breakfast.
Egg bites will stay good in the fridge, when sealed properly, for up to 4 days.
