I've seen lots of different ricotta toast combinations and I would enter this recipe in a contest against them. Bold statement, I know, but I'm that passionate about it.
This ricotta toast variation starts with a good quality bread, like French bread or Italian loaf from a bakery or made fresh in the grocery store or at home. It's then topped with a simple ricotta and honey mixture. Fresh strawberries and chopped basil (my favorite part) are carefully placed over the spread and for a finishing touch-balsamic glaze.
It's really all about fresh ingredients with this one, and the combination is phenomenal.

The Toast-A very important component! I like to use a french bread or Italian Loaf that is pre-sliced for toast, baked fresh from the grocery store. You want it toasted until just golden brown to create a crunchy bite.
Ricotta Cheese-I'm not going to lie, when I saw this ricotta toast trend start, I was a bit turned off by the ricotta part. When I think of ricotta, I want lasagna. However, I'm no longer against it. It has a really mild flavor that takes on the sweetness of the honey, and also adds this great texture. It has won me over.
Honey- For sweetness and makes the ricotta spread creamier.
Strawberries- Sweet and tart all at the same time. Look for fresh strawberries that are firm and juicy.
Fresh Basil- Don't skip on the basil. It is my absolute favorite ingredient in this toast and I promise it's even good for breakfast.
Balsamic Glaze- Just a nice drizzle of it right before serving adds a tangy and sweet taste. YUM!

Substitutions and Variations:
For the bread, you could substitute a sourdough or Italian round.
Not a fan of balsamic glaze? You can leave it off or drizzle with honey instead of the balsamic!
Any type of ricotta cheese can be used in this recipe, but I prefer the whole milk ricotta versus skim or low fat.

How to Make Strawberry Ricotta Toast:
Step 1: Prepare the Toppings
Cut the strawberries into thin slices. Chiffonade the basil by rolling it up and cutting it into thin slices. It doesn't have to be perfect.
Step 2: Prepare the Ricotta Spread
Into a small bowl, stir together the honey and ricotta cheese. Set aside.
Step 3: Toast the Bread and Assemble
Toast the bread until crispy and golden brown. Spread the ricotta mixture over the slices.
Step 4: Add Toppings.
Top with sliced strawberries and fresh basil.
Step 5: Serve & Enjoy
Right before serving, drizzle on the balsamic glaze and enjoy!
