Ingredients:
Tortilla Shells: Look for the burrito size of flour tortillas. The mission brand is really good and super pliable, which is helpful when folding.
Cheese: I prefer cheddar cheese, but you can use other varieties, just make sure to shred it yourself from the block. Bagged, pre shredded cheeses won't melt well because of the anti-caking agents used.
Bacon: I like using original (traditional) or applewood flavor for this recipe. Buy the regular sliced versus thick cut for a quicker cook.

Substitutions and Variations:
- The Bacon can be swapped out with breakfast sausage. Use ½ a regular package, about 6 to 8 ounces, and break up on the blackstone griddle until no longer pink.
- For more flavor, add some sauce like this Chipotle Mayo or Dijonnaise.
- The Burrito Sized Tortillas can be swapped out for Fajita size, but divide the egg mixture into 3 shells instead of 2, so they can hold it all.

How to Make Blackstone Breakfast Burritos:
Step 1: Turn on the Blackstone Griddle over medium heat. Lay 5 strips of bacon flat onto the griddle and cook for 3-4 minutes on each side until cooked and crispy.
Step 2: Transfer the bacon to a cutting board and chop into bite sized pieces.
Step 3: Reduce the griddle to medium low heat and allow to cool down for a few minutes. Melt 1 tablespoon of butter over the griddle and pour the whisked eggs over the melted butter. Use the blackstone spatulas to scramble up the eggs. Immediately add the cheese, hot sauce, salt and pepper, bacon and green onion over the eggs and continue to toss with the spatula. Note: It only takes a few minutes to cook the eggs. Turn off the heat on the griddle.
Step 4: Place the burrito shells over the eggs for 30-60 seconds to warm them up and make them more pliable.
Step 5: (1) Load the egg filling into the center of the burritos. (2) Fold over the top and bottom portions of the burrito. (3) Roll the burrito over to close it up. (4) Turn the griddle back to medium heat. Add remaining tablespoon of butter and place the burritos seam side down on top of the butter. Cook for 1-2 minutes on each side until golden brown.

Step 6: Remove the burritos from the griddle and slice in half. Serve and enjoy!
Expert Tips:
- Reduce the heat to low after cooking the bacon and allow the griddle to cool down a bit before adding the eggs.
- The eggs cook really quick so it's good to have the cheese, salt and pepper, green onions and bacon all ready to add in quickly. Be careful when placing ingredients, bowls, etc. on the side of the blackstone because mine gets really hot.

- 4 eggs, whisked until combined (scrambled)
- 1 cup cheddar cheese, shredded from the block
- 1 tablespoon green onion, sliced on a bias
- ⅛ teaspoon salt
- ⅛ teaspoon black pepper
- dash of hot sauce
- 2 burrito sized flour tortillas
