I'm being honest when I tell you that I only ate one of these before they all went missing. My kids are home on Summer break and you can't have anything sugar related without them devouring it.
These are seriously so good though. We're taking marshmallow fluff and sandwiching it between two Teddy Grahams then dunking the whole thing in chocolate and sprinkling over sea salt. It makes you feel like you're right next to a campfire, but without the stinky hair.

Ingredients:
Teddy Grahams: A fun little graham cracker snack perfect for this recipe. I was hoping you could see more of the bears once the chocolate was on, but it kind of just turned out like a delicious blob of chocolate.
Marshmallow Creme: You only need about ¾ cup and this Jet Puffed version came in the smallest container, so I bought it instead of the larger, more expensive Marshmallow Fluff brand. You can choose your favorite type of Marshmallow fluff.
Melting Wafers: The Ghirardelli brand of melting wafers is more expensive than others, but the chocolate quality is so much better. These also melt way smoother and stay melted longer than chocolate chips. Chocolate chips seize up more often too.
Sea Salt: An optional ingredient, but we loved it. I like using the flaky sea salt for the best taste.

Substitutions and Variations:
- If you want to swap out the Teddy Grahams, Annies brand of Graham Cracker Bunnies will also work for this recipe and so will Golden Grahams cereal.
- The Milk Chocolate Wafers can be substituted with dark chocolate or white chocolate wafers too. If you're making these for a Summer holiday, you could do white chocolate with red and blue sprinkles or sanding sugar. Super cute!

How to Make Smores Bites:
Step 1: Grab 1 teddy graham and use a knife to spread just a bit of marshmallow topping on the inside of the bear cracker. Use another teddy graham to create a sandwich with marshmallow filling. Work quickly and place onto a plate.
Step 2: Once you get between 20-25 sandwiches on the plate, place it in the freezer. Repeat with another 20-25 sandwiches and freeze that plate too. It's easier to work in two batches because the fluff seems to swell a bit at room temperature and makes them fall apart. Allow the graham cracker sandwiches to stay in the freezer for 45 minutes.
Step 3: Line the countertop with a large sheet of parchment paper. Keep the sandwiches in the freezer while you melt the chocolate wafers in the microwave or double boiler.
Step 4: Once the chocolate is smooth, remove the first plate from the freezer (leaving the other plate) and take each cookie sandwich and submerge one at a time into the chocolate.
Step 5: Use a fork to remove it and allow the excess chocolate to drip off.
Step 6: Transfer onto the parchment paper and add on sea salt after about 4-5 sandwiches so they stick well before they start to dry. Once the first plate is finished, remove the second plate from the freezer and repeat the process. Allow them to set on the counter until completely hardened.
Step 7: When the chocolate hardens, serve and enjoy! These taste good cold out of the fridge too.
Expert Tips:
- If the Teddy Grahams are missing a part of them like a leg, it doesn't matter. You can't see them that good with the chocolate coating anyways.
- Work quickly with this recipe and use two different plates so you can stick the sandwiches in the freezer faster. The marshmallow fluff starts to swell when it sits out too long and the sandwiches kind of fall apart and make a mess.
- When the sandwiches come out of the freezer, give them a bit of a squish and make sure they are pretty even before dumping in the chocolate.
- When working with melting chocolate, make sure not even a drip of water enters the chocolate or it could seize it up and harden. If this happens, you can try and add in a teaspoon of coconut oil or even vegetable oil, but sometimes it's too late and you'll need another bag.

Recipe FAQs:
I tested this recipe with the mini marshmallows by baking them in the oven to melt over the teddy grahams, but they fell off easy and I didn't like the way the teddy grahams tasted after baking. They were kind of stale, so I don't recommend this.
Store in a sealed container at room temperature or in the fridge for up to 2-3 days.
