These Easy Quesadillas are perfect to serve on Game Day or add these into your easy weeknight dinner rotation.
The recipe is made with just enough heat for flavor, but you won't be chugging water to combat the spice. You can serve some Frank's Buffalo Wing Sauce on the side for those who like it extra spicy!

Rotisserie Chicken- Tender, juicy chicken from the grocery store to save on time.
Frank's Red Hot Buffalo Wing Sauce- Flavorful, spicy goodness that is perfect for buffalo chicken anything. Try these Buffalo Chicken Wonton Cups too!
Green Onion or Chives- For freshness and crunch.
Monterey Jack and Cheddar Cheese- The best cheese combo to create creamy quesadillas.
Garlic Powder, Salt and Pepper- Additional seasoning for a final touch.
Flour Tortillas- For a hearty tortilla that won't fall apart when you're eating it.
Sour Cream- Mandatory dipping sauce (at least for me) for these quesadillas. My sour cream sauce is delicious too!

Popular Additions or Substitutions:
Feel free to bake or pan fry chicken breast instead of the rotisserie chicken if you have it on hand. I personally love the tenderness of the meat from the rotisserie chicken for this particular recipe, which is why I use store bought rotisserie chicken.
Love Spicy? Add in an extra ⅓ cup of wing sauce, or substitute pepper jack cheese for Monterey Jack or Cheddar.
Want to Add Veggies? Bell Peppers and Onions would be a fabulous addition to these quesadillas if you are looking to add more veggies. Make sure to pan fry ahead of time so they are softened in the quesadillas.

How to Make Quick Buffalo Chicken Quesadillas with Rotisserie Chicken:
Here are the Step by Step Instructions for these Rotisserie Chicken Quesadillas.
Step 1: Into a large bowl, mix in the chicken, buffalo wing sauce, green onions, garlic powder, salt and pepper together.
Step 2: Onto a flour tortilla, sprinkle on ⅕ of the cheddar cheese. Top with chicken mixture, and ⅕ of the shredded monterey jack. Cover with another tortilla. Repeat with remaining 4 Quesadillas.
Step 3: Heat a large skillet to medium heat. Add in ½ tablespoon of butter. Allow it to heat up and add one quesadilla. I like to use a pan lid to press down and allow it to sit on top of the quesadilla for a minute to melt the cheese. After a minute or two and the bottom looks browned, flip over and add ½ tablespoon of butter into the pan if needed. Cook for another minute and set aside. Repeat for each quesadilla.
Step 4: Once they are all cooked, slice with a pizza cutter or knife into fours. Enjoy with a side of sour cream or ranch dressing.
Expert Tip:
Remember to use enough butter in the pan for each quesadilla. If the butter starts to burn, turn down the heat a bit. You may need to wipe out some of the burnt butter between quesadillas. Butter has a lower burning point than oil, but I love it for quesadillas and grilled cheese. You just have to be patient with it.

Recipe FAQs:
If you like mild buffalo wings, then they should be perfect. If you don't like heat at all, leave the buffalo sauce completely off.
Heat them in the oven at 350 degrees for 10 to 15 minutes in tin foil or on a baking sheet. The microwave will make them soggy, so I don't like to use it.
Allow them to cool, then wrap in plastic wrap and tin foil. They will stay fresh for two days. Be sure to remove the plastic wrap before reheating in the oven.

Ingredients
- 1 store bought rotisserie chicken (skin removed and meat chopped into small cubes) or 2 cooked chicken breasts
- 4 ounces cheddar cheese, shredded
- 4 ounces monterey jack cheese, shredded
- 1 teaspoon garlic powder
- ¼ cup green onions, chopped fine
- ⅓ cup Frank's Buffalo Wing Sauce
- 10 fajita size flour tortillas
- 5 tablespoons of salted butter
- ¼ teaspoon salt
- ⅛ teaspoon black pepper
- Sour Cream or Ranch Dressing + additional Frank's Buffalo Sauce for serving (Optional)
Instructions
- Start by shredding the cheeses, and chopping the rotisserie meat into cubes. Finely chop the green onion.
- Into a large bowl, mix in the chicken, buffalo wing sauce, green onions, garlic powder, salt and pepper together.
- Onto a flour tortilla, sprinkle on about ⅕ of the cheddar cheese. Top with chicken mixture, and ⅕ of the shredded monterey jack. Cover with another tortilla. Repeat with remaining 4 Quesadillas.
