Puff Pastry Pop Tarts are stuffed with Strawberry Jam and topped with thick icing for the most delicious breakfast (or dessert). These Homemade Pop Tarts are so easy to make in minutes with only 6 ingredients, then pop them into the oven for a way better than store bought version!
My family kept asking me to make homemade Pop Tarts and I kept putting it off until a few months ago. Now I can't stop making them because they taste amazing!
These have quickly become one of our favorite weekend and holiday breakfasts. Sometimes we eat them for dessert too! You can add whatever Sprinkles you want to make them festive for the season or holiday. I made this batch for Christmas.

Why You'll Love This Recipe:
- A Kid Favorite. My kids go bonkers over these and adults love them too.
- Easy: It is more effort than unwrapping a Pop Tart, but we're using store bought puff pastry as a shortcut to make this a really easy recipe.
- Quick. Ready to eat in 40 minutes!
- Delish. Strawberry Jam is stuffed inside the puffiest, flaky dough and makes an amazing breakfast!

Ingredients:

Puff Pastry: The Jus Rol brand is my favorite, and it's fresh so you don't have to worry about thawing out the dough before using it. Find it near the eggs at the grocery store.
Strawberry Preserves: I like Bonne Maman Strawberry Preserves or the Smucker's brand. Preserves is the thickest of the jams and jellies, with larger chunks of fruit in it. Thicker is better in this recipe because it is less likely to leak out, like jelly might.
Sprinkles: These are the Fancy Sprinkles brand, which I found and love! These have the soft sprinkles with white chocolate chips and some cute Christmas shapes.

Substitutions and Variations:
- Feel free to use other jams like grape, apricot, cherry, etc.
- If you want them less sugary, you can leave off the icing and/or sprinkles.
- Want the icing vanilla flavored? Add in ยฝ teaspoon of vanilla extract.

How to Make Puff Pastry Pop Tarts:

Step 1: Preheat the oven to 425 degrees. Line a cookie sheet with parchment paper. Make the Egg Wash by cracking one egg into a bowl and add in 1 tablespoon of water. Whisk or use a fork to combine.

Step 2: (1) Open the puff pastry and roll out. Use a pizza cutter to make 4 vertical cuts to create 5 long rectangles of similar size. (2) Add about 1 tablespoon of strawberry preserves into the lower center portion of the puff pastry, being careful to leave the surrounding edges free from jam. (3) Brush the edges without jam with the egg wash. (4) Fold the top of the pastry over to cover up the jam and line up with the bottom portion. Press the edges shut with your fingers, then take the prongs of a fork and press around the edges of the pastry to seal it. Place all 5 pastries on the parchment lined cookie sheet, spreading them out as much as possible. Bake for 12-15 minutes until golden brown.

Step 3: As the Pop Tarts are baking, in a large bowl, whisk together the powdered sugar and milk to combine. Note: If the icing looks too watery, add in a tablespoon at a time of powdered sugar until it's the right consistency. I like it thick.

Step 4: Once the Pop Tarts are finished baking, allow them to cool for 10 minutes on a wire rack.

Step 5: Spoon the icing over the Pop Tarts.

Step 6: Add on sprinkles while the icing is still wet. Allow the icing to harden for a few minutes, then serve and enjoy!
Expert Tips:
- Don't overstuff the pastries with Strawberry preserves, or it will leak out.
- After adding the jam, it's really important to seal the pastries shut by first pressing the edges together, then finishing with a fork. This will help the preserves from leaking out.
