One of the downfalls of ground chicken is it dries out quickly because it's low in fat. This recipe uses teriyaki sauce to soak into the meat to keep it nice and juicy.

Ingredients:

Ground Chicken: An inexpensive protein option that feeds a family of four. It soaks up the teriyaki sauce and tastes delicious too. Try this Ground Chicken Spaghetti too.
Mushroom, Zucchini and Onions: Vegetables that pack a ton of taste and pair really well with Asian ingredients.
Homemade Teriyaki Sauce: Soy sauce, hoisin sauce, rice vinegar, sesame oil, red pepper flakes along with fresh garlic and ginger make the best teriyaki sauce, that is full of umami flavors.
Sesame Seeds: Optional, but they add a nice texture to the finished dish.

Swapping or Adding Ingredients:
Don't have all the ingredients for the homemade teriyaki sauce? Feel free to use just a few tablespoons of store-bought teriyaki sauce.
Ground Turkey, Ground Pork or Ground Beef can be substituted for the Ground Chicken. I recommend a leaner ground beef, 93/7, or drain the grease out of the pan before adding in the teriyaki sauce.
Any of the vegetables can be left out. I know kids are sometimes weird about zucchini. Ok, and onion and mushroom. If you chop them up small enough sometimes you can get away with it. ๐
Want to add more flavor? Top it with some chopped pecans or freshly chopped cilantro when serving.
Big on heat? Add in some spicy sriracha or double or triple the red pepper flakes.

Vegetable Prep for the Stir Fry:

The longest portion of making this recipe is preparing the vegetables and grating the ginger. For the Zucchini, I like to remove the stems, then quarter and dice. The onions and mushrooms can be roughly diced.
The ginger and garlic are used in the sauce and don't cook down, so it's important to mince the garlic and grate the ginger. When grating ginger, use the edge of a spoon, or a paring knife, to remove the exterior skin. Then, grate the inner portion on the finest side of the cheese grater, or preferably a microplane zester.
Step by Step Instructions for Ground Chicken Stir Fry:

Step 1: If you're preparing rice, follow the package instructions and start the rice first because it takes the longest to cook. I use my rice cooker and find that 1 cup makes enough for our family of four. If you're feeding adults or teenagers, you might want to do 1.5 cups of rice.

Step 2: Into a large skillet over medium heat, add in the olive oil and allow it to heat up. Toss in mushrooms, onion and zucchini and cook for 4-5 minutes until softened, stirring frequently. They won't cook much more than this, so make sure they are very close to being done.

Step 3: Once they are cooked through, transfer to a plate and set aside.

Step 4: Add the ground chicken to the same skillet and use a meat chopper or wooden spoon to break up the meat as it cooks until no longer pink. It takes about 8 minutes to brown.

Step 5: Into a small bowl, combine the soy sauce, hoisin sauce, rice vinegar, sesame oil, garlic and ginger. Stir to combine.

Step 6: Pour the teriyaki sauce into the skillet and stir. Reduce the heat to medium low and cook in the sauce for 2-3 minutes.

Step 7: Toss the vegetables into the skillet and cook for another 2 minutes. Top with sesame seeds.

Step 8: Serve with rice and enjoy!
Tips for Stir Fry:
- If you're making rice, always rinse the rice with water in a strainer to get all the debris, dirt, and excess starch off the rice before cooking.
- Don't overcook the meat or veggies. Ground chicken dries out fast and if you overcook the zucchini, it will quickly turn to mush.
- Make sure to use the hoisin sauce or the teriyaki sauce will be too runny. The hoisin really helps thicken it and adds flavor.

Ground chicken is great to cook in the skillet because it only takes 8-10 minutes to cook through. You know it's done when it's no longer pink. Cook it over medium heat at the highest because it can dry out quickly. Ground Chicken has low fat and I recommend cooking it with a sauce, like this teriyaki sauce, to keep it juicy. I also like cooking ground chicken in enchilada sauce for tacos.
Simply allow the stir fry to cool down to room temperature, then add into a sealed container. Store in the fridge for up to 3 days.
Reheat in a skillet over medium low heat on the stovetop for about 5 minutes, stirring frequently until hot and sizzling.
