My kids are in love with these Chocolate Peanut Butter Banana Bites, which is wild because neither of them are crazy about bananas.
I was worried the banana would get super hard in the freezer, but they actually stay the perfect texture, like frozen, but still on the softer side. It truly is the best bite sized frozen snack.

Ingredients for Frozen Banana Bites:
Bananas: Use ripe bananas for this recipe. They will taste sweeter versus unripe have a bitter taste. Give them a few more days on the counter if needed for a better result.
Chocolate Chips: Melted into velvety chocolate for dunking the bananas. I'm obsessed with Ghirardelli Milk Chocolate Chips and I used them for this recipe.
Coconut Oil: Adds a bit of fat into the chocolate chips to avoid the melted chocolate from hardening quickly. Chocolate Chips tend to melt perfectly, but you only get about 2-3 minutes for dunking before it starts to chunk up. The coconut oil gives you a bit more time, but you still have to work fast.
Peanut Butter: A brand like Skippy or Jif is going to be a lot easier to work with in this recipe because it stays in place on top of the banana before freezing. The natural kind is most likely going to run off the banana because of it's texture.
Flaky Sea Salt: The best topping for these chocolate covered bananas and adds just a touch of salt to balance out the sweetness.

The milk chocolate chips can be substituted with dark chocolate chips or semi sweet.
If you want to be able to work slower dipping the chocolate and aren't big on coconut oil, I will sometimes use Ghirardelli Melting wafers. They will stay melted without hardening for a bit longer than the chocolate chip and coconut oil combination.

How to Make Banana Peanut Butter Bites (Step by Step Instructions):
Step 1: Peel and cut bananas into ½ inch slices.
Step 2: Line a baking rack or cookie sheet with parchment paper. Then, spread out the banana slices into flat circles on the tray. Dollop about ¾ teaspoon size of peanut butter onto the top of each banana slice. Freeze for 45 minutes.
Note: I like to use a small baking rack instead of a cookie sheet because it's easier to fit into the freezer.
Step 3: Once the bananas have been in the freezer for about 40 minutes, prepare another piece of parchment paper about the same size as the first one and place on the countertop. Melt the chocolate and coconut oil in a double boiler over about 1 cup of water or in the microwave. Remove the banana slices from the freezer.
Step 4: Work quickly when the chocolate is the perfect consistency and keep the stovetop heat on low if using the double boiler. Dip each banana into the chocolate, then place onto the parchment paper.
Step 5: Once you finish about 6-8 bananas, quickly sprinkle on a bit of sea salt before the chocolate dries.
Step 6: When you're finished dipping chocolate and sprinkling salt, place them back into the freezer for 1 hour before enjoying.

- Make sure to freeze the peanut butter bananas to attach the banana and peanut butter and make them easier to dunk into the chocolate.
- Work quickly with the melted chocolate or it will harden and be hard to dunk the bananas into.

Chocolate chips can be stinkers and love to harden up after melting. Adding a tablespoon of coconut oil into the mix will help give you a bit more time (at least a few minutes) of working with a better textured chocolate.
Once the chocolate peanut butter banana bites are really frozen, after a few hours, add them into a gallon size bag and keep them in the freezer for snacking.
