I've been fighting a cold this week with a really bad sore throat. The kind that makes you feel like the Grinch when he eats glass in the movie.
I've been on repeat between these ice pops, Dutch Oven Chicken Noodle Soup and Pastina Soup, and I'm starting to feel so much better.
These Sore Throat Popsicles are a combination of fruit, honey, coconut water, and fresh grated ginger for a seriously healing (and very cold) experience. They're also super healthy with lots of nutrition.

Ingredients:
Frozen Mango: An immunity boosting fruit with Vitamin A, B, C & more. I prefer using frozen mango because it's fully ripe and it blends better without producing a lot of strands in the mixture.
Frozen Pineapple: High in vitamin C for immunity and B vitamins, which are good for brain function and having energy. I prefer frozen for less strands, like the mango, and for quicker prep time.
Ginger: The list of benefits are amazing for this spice. Some of the major ones include reducing nausea and killing off germs in the body. Ginger is strong, so make sure to really finely grate it.
Honey: Honey soothes the throat and helps with coughing. *Remember babies under 1 year old cannot have honey.
Coconut Water: Hydrating and packed with nutrients and electrolytes. I love the Vita Coco brand.
Popsicle Mold: Any popsicle mold works great for this recipe. It will fill 6 to 8 ice pops depending on the size of the mold.

Substitutions:
- Ginger has a strong flavor that you can taste in this recipe. If you know the kids won't like it, you can leave it out.
- For a more fruit packed taste, the coconut water can be substituted with orange juice.
How to Make Sore Throat Popsicles:
Step 1: Into the blender, add frozen mango, pineapple, grated ginger, honey and coconut water.
Step 2: Blend on high, then pulse until fully mixed.
Step 3: Pour into popsicle molds until full. Push in the handles carefully and freeze overnight.
Step 4: Pull the popsicles from the popsicle molds and enjoy.
Expert Tips:
- Grate the ginger really fine on a microplane zester to avoid large chunks.
- Freeze overnight for best texture.
- If the ice pops won't come out of the mold, run a little warm water over the mold portion to help them break free.

- 1 cup frozen pineapple chunks
- ½ teaspoon fresh grated ginger
- 1 tablespoon honey
- 2 cups coconut water
Instructions
- Into the blender, add frozen mango, pineapple, grated ginger, honey and coconut water.
- Blend on high, then pulse until fully mixed.
- Pour into popsicle molds until full. Push in the handle and freeze overnight.
- Pull the popsicles from the popsicle molds and enjoy.
