I grew up in a pretty much vegetarian household and I remember a few times a year we would make it to some kind of fair or festival. I would smell the bratwurst grilling, beg for one, and just be in absolute heaven while eating it.
I still love them, whether baked in the oven, grilled or even in the skillet. I do find that baking brats is the easiest way and I'm excited to teach you this method.

Ingredients:
Bratwurst: The most important part of this recipe is finding a good quality bratwurst. We are using just olive oil and salt and relying on great flavors from the inside of the sausages. I'm using a bratwurst from Lowe's food. If you can get a store made bratwurst versus packaged from the factory, it may taste fresher.
Olive Oil: An important part of this recipe to help the brats crisp up and the oil roasts the veggies without them burning up in the oven. Because we're baking at a high temperature of 400 degrees, olive oil is a great choice with it's high burning point.

Substitutions and Variations:
- The peppers and onions are optional and any kind of bell pepper color tastes amazing.
- Other sausage types work in this recipe too, but they may cook at different times depending on thickness, meat type, etc. Make sure the internal temperature reaches 160 degrees for pork or beef and 165 degrees for turkey and chicken sausages.

How to Cook Bratwurst in the Oven:
Step 1: Preheat the oven to 400 degrees. Grab a cookie sheet and place the peppers and onions on one half of it. Pour about ½ of the olive oil over the peppers and onions and top with salt. Toss with your hands to coat the entire surfaces of the veggies.
Step 2: Add the bratwurst to the other half of the cookie sheet and brush each side with the remaining olive oil.
Step 3: Place the cookie sheet on the rack towards the center of the oven. Bake for 10 minutes, then toss the veggies and flip the sausages. Bake for another 10-15 minutes, until the internal temperature reaches 160 degrees.
Step 4: Remove the cookie sheet from the oven and allow the food to cool for about 5 minutes before serving. The hot dog buns can be added to the oven to warm up as the brats are cooling. Serve the bratwurst topped with the peppers, onions, and all your favorite condiments.

- Really coat the vegetables in the oil as this will protect them from burning.
- Be careful when poking the internal thermometer into the sausage. Sometimes hot juices will shoot out.
