This mustard sauce came to life on a weeknight when I needed to have some kind of tangy sauce to pair with this Baked Italian Sausage Sheet Pan Meal.
It's honestly so good and tastes amazing paired with sausage. It's tangy and creamy, with a sharp bite from the dijon mustard.

Ingredients for Dijon Mustard Aioli:
Dijon Mustard- Mustard with a sharper, spicier taste than traditional yellow mustard and the main character in this sauce.
Mayonnaise-Softens the spice from the dijon and adds a creamy texture. I prefer Hellmann's mayonnaise, but you can use any of your favorite brands.
Honey- Just a few teaspoons to add a bit of sweetness.
Lemon Juice- For a bit of acidity and citrus taste.

Substitutions and Variations:
If you don't have fresh lemon juice, you can use the bottled lemon juice.
Not big on garlic? Leave it out.
Fresh herbs like dill or parsley would also be delicious in this sauce.
If you don't have an immersion blender, you can use a food processor, blender or just mince the garlic really fine and use a bowl and whisk to blend.

Step 1: Add the dijon mustard, mayonnaise, garlic, lemon juice, honey and salt and pepper into an immersion blender cup and pulse until smooth.
Step 2: Refrigerate for preferably at least 30 minutes before serving. Serve with sausage, burgers, sandwiches and more! Enjoy.
Expert Tips:
Place the immersion blender down into the ingredients before pulsing to avoid splashing.
If you are just whisking the ingredients, instead of blending, make sure to mince the garlic really fine.
