Ingredients:
Turkey: Deli turkey in a thin or shaved variety is my favorite and I prefer the Boar's head brand because it isn't slimy. I've used the oven gold variety in this recipe, which is pretty basic and allows the other flavors to shine.
Bacon: I recommend an Applewood or Original/Traditional for these melts and I cook it until pretty crispy.
Cheese: Monterey Jack is definitely not the most commonly used cheese for Turkey Melts, but I promise you it's so good.

Substitutions and Variations:
- Instead of sourdough bread, Italian or Rye bread would be really delicious.
- Not big on bacon? Leave it off.
- For more cheese choices, try Provolone, Swiss or Cheddar.
- Don't like Mayo? You can just do dijon, but I promise it doesn't taste like mayo, because I'm not a big fan of plain mayo either.

How to Make a Turkey Melt:
Step 1: In a small bowl, stir together the dijon mustard, mayonnaise, salt and pepper until combined.
Step 2: Spread onto the inside of each slice of bread. Note: I like to really lather mine on.
Step 3: Layer shredded cheese on top of the sauce, then add turkey slices and bacon. Carefully close it up and press down with your hand on the sandwich to seal it.
Step 4: Into a medium skillet over medium heat on the stovetop, melt half the butter. Add the sandwich and cover with a lid for about 2-3 minutes. This will help warm up the turkey deli meat and melt the cheese. Add remaining butter, flip and cook for another few minutes until the bread is nice and toasted.
Step 5: Slice in half, serve and enjoy!

- Shred the cheese yourself for a better melt. Bagged, pre-shredded cheeses contains preservatives that don't melt well.
- Cover the sandwich up for a few minutes once you place it on the pan to make sure the turkey warms up and the cheese melts entirely.

Ingredients
- 2 teaspoons mayonnaise
- 1 teaspoon dijon mustard
- ⅛ teaspoon salt
- ⅛ teaspoon black pepper
- 2 slices sourdough bread
- ⅓ cup Monterey Jack cheese, shredded from the block
- 4-5 slices of deli turkey
- 2 slices original bacon, cooked and sliced in half (or leave them whole if you have big enough bread)
- 1 tablespoon salted butter
