These White Chocolate Peppermint Truffles are the tastiest no bake Christmas treat! They're super easy to make in under an hour with only 5 ingredients. Get ready to bite into White Chocolate with a soft, creamy Oreo center.
Truffles are one of my favorite Christmas treats to eat, and to give away as DIY gifts. They're no bake and always look fancier than a cookie, even though they are really low effort. Plus, these taste amazing.

Ingredients:

Oreos: Use the regular Oreos for this recipe, not the double stuffed.
Peppermint: I bought this pre-crushed Candy Cane at Target, but you can also take two Candy Canes and crush them up with a kitchen mallet or rolling pin.
White Chocolate Melting Wafers: I highly recommend the Ghirardelli brand of melting wafers for this recipe. The taste is way better than other brands.

Substitutions and Variations:
- For less peppermint flavor, feel free to leave out the peppermint extract.
- Don't like white chocolate? You can use milk or dark chocolate Melting wafers instead.
- I don't recommend using Chocolate Chips. They don't stay melted as long as the wafers, even with coconut oil added, and you need time to dunk every truffle.
- Microwave Method: Follow the instructions on the melting wafers to melt the chocolate in the microwave. You may have to return the chocolate to the microwave half way through dipping, if it starts to harden.

How to Make White Chocolate Peppermint Truffles:

Step 1: (1) Add all the Oreos into a food processor and pulse to combine until fine crumbs. (2) Transfer half of the Oreo crumbs into a bowl and leave the other half of the Oreos in the food processor. (3) Add ยฝ of the cream cheese into the food processor and blend on high until the Oreo crumbs and cream cheese form together to look like wet dough. Transfer to a large bowl, then blend the second batch of Oreos with the remaining 4 ounces of cream cheese, and add to the bowl. Note: If you have a large food processor, you can do it all in one batch. (4) Roll the batter into one tablespoon sized balls.

Step 2: Place the Oreo balls on a plate and place in the freezer for 30 minutes.

Step 3: Line the countertop with a large sheet of parchment paper. In a double boiler on the stovetop over medium low heat, add 1 cup of water into the bottom portion and pour the melting wafers into the top bowl. Allow to melt. Stir to combine and pour in ยฝ teaspoon of peppermint extract *measure this because it's really strong and you don't want to over pour. Use a fork to dunk and flip each truffle into the white chocolate. Transfer to parchment paper. Keep the heat on low to keep the chocolate melted.

Step 4: Once you coat 2-3 truffles in white chocolate, sprinkle over the crushed peppermint. If you wait until the end, the chocolate will be hardened and won't stick. Towards the end of dunking, you'll need to roll them in the chocolate once it starts getting low.

Step 5: Allow the chocolate to harden completely, then serve and enjoy! Note: If the truffles have extra white chocolate near the base, you can flake it off easily.
Expert Tips:
- Allow the cream cheese to soften to room temperature for an hour so it blends well.
- My food processor gets too full and bogged down with the full Oreo amount and cream cheese so I process it in two batches.
- Do NOT allow even a drop of water to mix in with the white chocolate wafers or they will seize up and harden.

Recipe FAQs:
Melting wafers will give you more time for dunking the Oreo balls. Chocolate chips only stay melted correctly for a short amount of time, which isn't long enough for this recipe.
I like to roll them about 1 tablespoon in size. Each will be about 2 bites.
