Popcorn isn't usually my snack of choice, but this White Chocolate Peppermint Popcorn has changed my habits. It is impossible to stop eating and tis the season!

Ingredients:

Popcorn: I like the Boom Chicka Pop Sea Salt popcorn for this recipe. It always tastes really fresh out of the bag.
White Chocolate Vanilla Melting Wafers: The Ghirardelli brand is a must for a good quality chocolate. In my opinion, other melting wafers do not taste good and it's not worth the savings in price.
Crushed Peppermint: I grabbed a bottle in the Christmas section at Target, but regular candy canes can easily be crushed too. Try these Peppermint Truffles too!

Substitutions and Variations:
- Other brands of popcorn can be used for this recipe.
- If you don't want to use melting chocolate, you can use white chocolate chips and a tablespoon of coconut oil. Note: You will have to work quicker with chocolate chips because the chocolate will harden quicker than the melting wafers.
- The crushed peppermint bottle is equal to about 3 candy canes. To crush them, simply unwrap the candy canes and place them in a gallon sized bag. Next, whack with a kitchen mallet or rolling pin until fine.

How to Make White Chocolate Peppermint Popcorn:

Step 1: Empty the popcorn into a large bowl. Line the countertop with a long piece of parchment paper.

Step 2: In a double boiler on medium low heat on the stovetop (or in a microwave safe dish), melt the chocolate melting wafers until smooth and creamy.

Step 3: Pour ยฝ of melted white chocolate into the popcorn bowl and mix well. Work quickly and pour the popcorn out from the bowl and spread out onto the parchment paper. Drizzle the remaining white chocolate over the popcorn, then sprinkle entire surface with the crushed peppermint. Move it around a bit to make sure most of it's covered.

Step 4: Allow the chocolate to harden completely, then break apart some of the large chunks. Serve and enjoy!

- Make sure the chocolate distributes well all over the popcorn.
- Add the peppermint when the chocolate is still really wet or it won't stick.

- 4.8 ounce Bag of Sea Salt Popcorn, preference for Boom Chicka Pop
- 10 ounce bag White Chocolate Vanilla Melting Wafers, preference for Ghirardelli brand
- 3 ounce container of crushed peppermint candy or 3 regular candy canes crushed into fine pieces
