These remind me of buffalo chicken nachos. The wonton shell crisps up a lot like a tortilla chip and it's stuffed with chicken, buffalo sauce, cream cheese and blue cheese for some really great flavors.

Wonton Wraps: Bake into a crispy texture, almost like a tortilla chip. They cook in muffin tins, which help them to form into a cup shape for the buffalo chicken filling.
Chicken Breast: Rotisserie chicken breast is used in this recipe to speed up cook time and it's always tender, delicious and soaks up the wing sauce really well.
Frank's Wing Sauce: Thick and creamy wing sauce adds heat and lots of flavor to the chicken filling.
Cream Cheese: Adds creamy texture and a mild tangy flavor to the filling.
Blue Cheese Crumbles: Cools the spicy flavors down a bit and overall just pairs really well with chicken and buffalo sauce.
Green Onions: Add a fresh crunch and pretty color and texture to the tops of these buffalo chicken cups.

Substitutions and Variations:
The blue cheese can be substituted with grated Cheddar Cheese for this recipe.
For the Frank's Wing Sauce, you can use mild, spicy or original. I highly recommend Wing Sauce for it's thicker consistency.
The rotisserie chicken breast can be substituted with cooked chicken breast, thigh, leg, etc. Make sure you have between 1 ¼ to 1 ½ cups of fully cooked diced chicken, and remove the skin before chopping.

How to Make Buffalo Chicken Wonton Cups:
Step 1: Preheat the oven to 325 degrees. Spray 2-12 count muffin tins with cooking spray (24 total muffin holes). Push one wonton wrap into each hole, pressing it all the way to the bottom and forming the sides to stick to the edges. Bake for 5 minutes.
Step 2: While the wontons are baking, add the cream cheese, diced chicken, buffalo wing sauce, blue cheese crumbles, salt and garlic powder to a large bowl. Stir until combined.
Step 3: Remove the wontons from the oven. Fill each wonton with a heaping teaspoon of filling. Return to the oven and bake for 5 minutes, then spin the muffin tray 180 degrees and cook for another 5-7 minutes. Remove from the oven as soon as the top edges start to bubble and brown.
Step 4: Allow the chicken wonton cups to cool for a few minutes. Sprinkle each cup with green onions, then serve and enjoy. Blue Cheese dressing or this Wingstop Ranch is great for serving on the side to drizzle over the buffalo chicken stuffed wonton cups.
Expert Tips:
- Spray cooking spray in each muffin tin hole before placing the wonton cups.
- Don't overfill each wonton cup or it will leak over and you won't have enough filling for all the wontons.
- Watch the wontons toward closely toward the end of baking. They go from not done to fully cooked and crispy really quickly. Pull them from the oven as soon as the edges have browned.

Recipe FAQs:
Wonton cups are so easy to make with just wonton wrappers and cooking spray. You also need a muffin tin to form them correctly and bake in the oven. Then, stuff the cups full of toppings, like buffalo chicken filling, and enjoy. They're the best on game days!
These wonton cups are best eaten fresh. If you have leftovers, allow them to cool to room temperature then store flat in a sealed container. To reheat, bake again at 325 degrees until warm.
I suggest prepping the filling ahead and pre-baking the wonton cups for 5-7 minutes. Wait until close to serving time to add the filling and bake the remaining 10 minutes for the freshest and crispiest taste.
