Get ready for chewy, gooey Smores Cookie Bars loaded with marshmallows, milk chocolate and peanut butter! These are a Summer favorite and super easy to make in just one bowl. Prep them in 10 minutes, then let the oven do the work.
I couldn't stop eating these and had to start handing them out to neighbors to get them out of my house. They are a lot like brownies, where you just continuously return to the counter and cut yourself another slice.
These are one of my new favorite Summer desserts and stay really fresh on the counter for a few days. My 15 year old daughter said they tasted even better the second day. They stay nice and chewy, which is rare for a cookie.

Ingredients:

Marshmallows: I like the mini marshmallows for this recipe because they are super easy to mix into the batter, and you get some in every bite.
Graham Crackers Crumbs: I bought these in the baking isle already in a fine crumbs from the box.

Substitutions and Variations:
- If you don't want to brown the butter, just melted is fine too.
- I used a natural peanut butter for the recipe, but Jif or Skippy kind of brands work good as well.
- Want to use regular graham crackers? Just pop them into the food processor until the crumbles are nice and fine.
- Milk chocolate chips, semi-sweet or dark chocolate all work great in this recipe.

How to Make Smores Cookie Bars:

Step 1: Preheat the oven to 350 degrees. Spray a bit of vegetable oil on the bottom of the 8x8 pan and line with parchment paper (this helps the parchment paper stay in place). Melt the butter in a skillet over medium low heat on the stovetop and cook for a few minutes, stirring frequently. Once fragrant with an amber color, immediately turn off the heat and transfer the butter to a bowl and allow to cool for about 10 minutes.

Step 2: In a large bowl, whisk together the flour, salt, baking soda, brown sugar and granulated sugar.

Step 3: Into the dry ingredient bowl, stir in eggs, vanilla extract, peanut butter and warm browned butter. Once it is mixed well, use your hands to mix it even more and form it into a cookie dough ball.

Step 4: Pour ¾ of the mini marshmallows and ¾ of the chocolate chips into the bowl and use your hands to mix them into all of the batter.

Step 5: Press the cookie dough into the parchment lined 8x8 dish. Sprinkle the remaining mini marshmallows and chocolate chips over the top of the dough. Bake for 20 minutes at 350 degrees.

Step 6: Allow the cookie bars to cool for 20 minutes before removing from the dish. Cut into 12 squares and enjoy!
Expert Tips:
- Browned Butter can quickly go from delicious to burnt, so make sure to immediately transfer it to a cool bowl once it is amber in color.
- Allow the cookie bars to cool for at least 20 minutes before removing from the dish so they don't break apart. I like to eat them warm (and cooled) 😂

Peanut Butter Smores Cookie Bars

Ingredients
- 4 tablespoons salted butter
- ⅔ cup all purpose flour
- ⅔ cup graham cracker crumbs, fine
- 1 teaspoon salt
- ½ teaspoon baking soda
- ½ cup brown sugar, packed
- ½ cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- ½ cup Peanut Butter (natural or a brand like jif or skippy works too)
- ¾ cup milk chocolate chips
- 2 cups mini marshmallows
- (1) 8x8 pan and parchment paper to line it
