I grew up in the South, but my family was from New York, and never made Southern food, and I was always to scared to try Pimento Cheese as a kid. What a mistake and man was I missing out!
This recipe is one of my favorites because I love the hint of spice the jalapeño brings to the party. Plus, you can prep this recipe in minutes.

Ingredients:

Cream Cheese: The base of the pimento cheese dip and brings in a creamy, tangy taste. Make sure to allow it to soften for 20-30 minutes prior to mixing. This will make it much easier to combine all the ingredients properly.
Mayonnaise: Another creamy addition for the base. If you like your pimento cheese dip on the thinner side, you may want to add a few extra tablespoons of mayonnaise. Hellmann's or Duke's mayonnaise both work great in this recipe and it just depends on your preference.
Cheddar Cheese: My favorite part of pimento cheese. It's extremely important to shred your own and do not buy the pre-shredded cheese in the bag. The texture of the final product will be off because it contains anti-caking agents. Also, the sharper the cheddar you can find, the better.
Pimento: Sweet red peppers, most commonly known as the inside of green olives. You can find these in a small jar, usually in the pasta isle.
Jalapeno: Brings spice and crunch to the party. If you want it on the mild side, be sure to remove the seeds and membranes of the pepper.
Spices: A combination of salt, pepper, garlic powder and paprika add extra flavor into dip.

Substitutions and Variations:
If you're looking for extra spicy, add a few dashes of cayenne pepper or hot sauce into the mix.
To make the dip thinner, stir in a few more tablespoons of mayonnaise.
How to Make Jalapeño Pimento Cheese:

Step 1: Allow the cream cheese to soften on the countertop for 20 minutes prior to starting the recipe. Grate the cheddar cheese on the larger section of the cheese grater. Mince the jalapeño and make sure to wear gloves or wash your hands well after.

Step 2: Add the cheddar cheese, jalapeño, pimentos, mayonnaise, cream cheese, and spices into the stand mixer bowl, or use a large bowl with hand mixer.

Step 3: Using the beater attachment, combine on medium low speed for a few minutes until fully combined. Place covered with plastic wrap in the fridge for 30 minutes or up to overnight.

Step 4: Serve and enjoy with crackers, veggies and more!

- 4 ounces cream cheese, softened for 30 minutes at room temperature
- 3 tablespoons mayonnaise
- 2 tablespoons jarred pimentos
- 1 teaspoon garlic powder
- ½ teaspoon paprika
- 1 teaspoon salt
- ⅛ teaspoon pepper
