These Watermelon Sticks are one of my absolute favorite Summer snacks to whip up for my kids. You can even prep double the amount and stick the leftovers in the fridge for snacking throughout the week.
I use a special Crinkle Cutter Knife that I bought off Amazon for around $10 and it really does create a fun way to eat watermelon.

Ingredients:

Watermelon: Fresh watermelon slices into the perfect fries. The best melon for this recipe is crisp and firm. A softer, mealy melon won't stay firm enough and the fries will break in half.
Coconut Yogurt: The perfect pair up with watermelon and lime flavors. Just a warning: This combo will make you want to be on a beach somewhere. I love the Siggis and Chobani brand of Coconut yogurt. Chobani is Greek, while the Siggis is Icelandic Skyr, and both are thick, creamy and high in protein.
Fresh Lime Juice and Zest: Just a touch of fresh lime juice squeezes into the yogurt for a hint of citrus. I like to add fresh zest over the yogurt for color too.
You also need a Crinkle Cutter Knife if you want the edges to look like the photo. If you just want Watermelon sticks, feel free to use a regular knife.

Variations:
If you like salty watermelon with a bit of spice, try sprinkling the watermelon with Tajin.
One mini melon can be used in place of the quarter of a large watermelon. I do think it's a bit easier to work with the larger watermelon though.
Different flavors of yogurt can be substituted for the coconut yogurt. I love coconut, but vanilla or strawberry is delish too.

How to Make Watermelon Fries (Step by Step Instructions):

Step 1: Place the pink portion of the quartered watermelon onto the cutting board so it's easier to slice. Carefully use a large knife to cut lengthwise every two inches to create half circle slices of watermelon.

Step 2: Cut off the outer rind with a regular knife, leaving just the pink watermelon flesh.

Step 3: Using the Crinkle Cutter Knife, cut into one inch strips with the knife running top to bottom on the shorter portion. If you do it lengthwise, the fries will fall apart because they will be too long.

Step 4: Repeat until all the fries are cut.

Step 5: Add the fresh lime juice into the yogurt container and stir to combine.

Step 6: Top the yogurt dip with lime zest if desired. Serve and enjoy!
Tips and Tricks:
- Don't cut the fries too long or they will fall apart in the dip.
- If you don't have the crinkle knife, simply slice into sticks with a regular knife.
- Buy a Seedless Watermelon if possible for easy eating.
