Brie Cranberry Bites

These little brie cranberry bites are the perfect appetizer idea for the Holiday Season. Baked in puff pastry, these bites are flaky and delicious.

I don't know about you, but on Thanksgiving Day, the last thing I want to deal with is difficult appetizer ideas. These are so simple to make with only 3 ingredients needed. Best thing is.. it only takes 25 minutes start to finish, and that's mostly baking in the oven.

The cranberry and brie cheese go together all too well & the flaky layers make this a holiday favorite. Add in some rosemary sprigs and on the festive scale, you are a TEN!

I used my homemade cranberry sauce that I love in this recipe, but if you are short on time or fresh ingredients, a canned cranberry sauce works good too. This is a no judgement zone..remember that.

The Ingredients for Brie Cranberry Bites:

Cranberry Sauce: For a tart bite of goodness

Brie: Delicious creamy texture and taste

Puff Pastry: Creates a flaky base

Optional Toppings: Drizzled Honey on top for sweetness, walnuts for a flavorful crunch, and rosemary sprig, which pairs well with all of these holiday flavors

Can I use canned cranberry sauce?

Sure thing, but if you have a few minutes to spare, try my homemade cranberry sauce recipe. It makes a difference and it's so simple to make.

Can I use a regular muffin pan for this recipe?

Absolutely, but you will need to cut the puff pastry into 12 larger squares, rather than 24 small ones. Also, you may need to cook them a few additional minutes. Just keep an eye on them to make sure they don't burn.

How to Make Brie Cranberry Bites:

Preheat the oven to 425 degrees.

Spray a 24 count mini cupcake/muffin pan with cooking spray.

Unwrap and unroll the puff pastry. Cut into 24 equally sized squares (see the video for a visual). It doesn't have to be perfect.

Tuck each square into a muffin pan hole, being careful not to punch through the pastry dough.

Top each square with a small spoonful of cranberry sauce, about a teaspoon full. Top with a chunk of the brie cheese.

Bake for 15 minutes.

Allow the mini brie cranberry bites to cool for 5 minutes before serving.

If desired, top each pastry with a piece of fresh rosemary, walnut and drizzle them with honey.

These little brie cranberry bites are the perfect appetizer idea for the Holiday Season. Baked in puff pastry crust, these bites are flaky and delicious.


Ingredients

Scale
  • 1 package of Puff Pastry (I used Wewalka, which is fresh, but frozen is fine too. Do allow it to thaw. Mine was just one sheet at 13 ounces. You will have leftovers if you use a 17 ounce package)
  • 1 cup of cranberry sauce
  • ½ pound of brie cheese , cut into 24 small cubes. The rind is edible and fine to use.
  • Optional: 24 walnuts, 24 pieces of fresh rosemary, & a drizzle of honey

Instructions
