These Mini Brie Bites in Puff Pastry are the perfect appetizer idea for the Holiday Season. Baked in puff pastry, these brie bites, filled with cranberry sauce, are flaky and delicious.
On Thanksgiving and Christmas day, the last thing I want to deal with is difficult appetizer ideas. These are so simple to make with only 3 ingredients needed. Best thing is.. it only takes 25 minutes start to finish, and that's mostly baking in the oven.
The cranberry and brie cheese go together all too well & the flaky layers make this a holiday favorite. Add in some rosemary sprigs and on the festive scale, you are a TEN!
I used my homemade cranberry sauce that I love in this recipe, but if you are short on time or fresh ingredients, a canned cranberry sauce is fine too. This is a no judgement zone.

Substitutions and Variations:
You can use a cranberry relish instead of cranberry sauce. Stonewall Kitchen brand has a highly rated cranberry relish, if you see that one in the store. Keep in mind, cranberry relish is made with less sugar and will be more tart than cranberry sauce.
Feel free to leave off the rosemary or walnuts. Those are just optional toppings.

How to Make Mini Brie Bites in Puff Pastry:

Here are the Step by Step Instructions for these Mini Brie Bites.
Step 1: Preheat the oven to 425 degrees. Spray a 24 count mini cupcake/muffin pan generously with cooking spray.
Unwrap and unroll the puff pastry. Cut into 24 equally sized squares.
Step 2: Tuck each square into a muffin pan hole, being careful not to punch through the pastry dough.
Step 3: Top each square with a small spoonful of cranberry sauce, about a teaspoon full. Top with a chunk of the brie cheese. Bake for 15 minutes.
Step 4: Allow the mini brie cranberry bites to cool for 5 minutes before serving. Then, serve and enjoy!
Optional: Serve each pastry with a piece of fresh rosemary, walnut and drizzle them with honey.
Expert Tips:
- To make sure the brie bites don't stick, coat the mini muffin pan pretty heavily with vegetable oil or cooking spray.
- After slicing into 24 squares, stretch them out just a bit to make them larger, without tearing the dough.

These Mini Brie Bites in Puff Pastry are the perfect appetizer idea for the Holiday Season. Baked in puff pastry, these brie bites filled with cranberry are flaky and delicious.
Ingredients
- 1 package of Puff Pastry (I used Wewalka, which is fresh, but frozen is fine too, just make sure it is fully thawed out). Mine was just one sheet at 13 ounces. You will have leftovers if you use a 17 ounce package)
- 1 cup of cranberry sauce
- ½ pound of brie cheese , cut into 24 small cubes. The rind is edible and fine to use.
- Optional: 24 walnuts, 24 pieces of fresh rosemary, & a drizzle of honey
Instructions
