Ingredients:
Brie-A creamy soft cheese made from cow's milk and originating from France. It's important to get the round brie for this recipe. The top rind is sliced off and the bottom portion acts as a bowl holding in all the creamy brie. If you buy the wedge, it's going to leak out and not give the best appearance.
Garlic Butter- Paper thin fresh garlic is roasted in butter over low heat until it reaches a slightly golden color. Roasting garlic removes that raw bitter flavor and makes it much more subtle for the palate. Try this Pull Apart Garlic Bread too!
Olive Oil-Added to the garlic butter to increase the burning point in the pan and allow the butter and garlic to cook longer without the butter browning too much and becoming bitter.
Rosemary and Thyme- Fresh herbs to pair with the creamy brie and honey. I suggest using very little and chopping them extremely fine, so the flavors aren't overpowering.
Honey-Just a drizzle to add in a touch of sweet flavor to the mix.
For dipping: Use toasted french bread (crostini), crackers, or veggies.
See recipe card below for full ingredient list and quantities.
Substitutions and Variations:
Want to add in some texture? Add a few tablespoons of chopped walnuts or pecans into the garlic butter.
Not big on sweet? Leave off the honey.
If you prefer to eat the brie rind, skip the shaving in step 1 and pour the garlic butter directly over the rind after baking.
If you're missing the fresh herbs, you can substitute with dried in a pinch, but I prefer the texture of the fresh leaves in this recipe.
How to Make Garlic Butter Baked Brie with Honey:
Step 1: Preheat the oven to 350 degrees. Carefully shave the top rind off of the brie round. Don't go too deep or you will remove some of the creamy inside.
Step 2: Place the Brie round on a cookie sheet lined with tin foil. Bake in the oven for 8-10 minutes until the inside is warm and gooey, but it isn't overflowing. Note: It's important to check it during the cooking process. If its overflowing, immediately pull it out of the oven.
Step 3: While the brie is baking, melt the butter into a large skillet on the stovetop over medium low heat. Add in the rosemary, thyme, and garlic and cook for 5-7 minutes, stirring occasionally. The garlic should be toasted until golden in color, but not at all brown. Reduce the heat to low if it starts to burn.
Step 4: Carefully transfer the gooey brie with a large spatula to a serving dish. Pour the roasted garlic butter and herbs over the top of the creamy brie.
Step 5: Drizzle the honey over the brie and serve with crackers, bread, or veggies.
Step 6: Enjoy!
Expert Tips:
- It's really important to watch the brie in the oven and pull it out before the creamy brie collapses over the side. It will still be completely edible and delicious, but not as pretty.
- Do not burn the butter or garlic. Either of these will result in bitter flavors.

Recipe FAQs:
Yes, brie rind is completely edible and safe to eat.
No, it is a very mild and creamy cheese with delicious flavors that even my kids love.
This isn't the best appetizer for transporting, unless you bake it there. It's messy and best served right out of the oven. For easier appetizers to bring to a party, try this Cowboy Caviar or Bacon Cream Cheese Crescent Rolls.
Store the leftover brie in a container or wrap in foil and store in the fridge for up to 3 days. To reheat, simply place it back into the oven on a foil wrapped cookie sheet and bake at 350 degrees until warm.
