The first time I ever tasted lavender simple syrup was at a French Bakery in a bubbly lemonade and I was so surprised at how delicious it was. I knew I had to replicate this at home because I didn't want to pay $7 for a lemonade and it is about 45 minutes from my house.
Just like that, Operation Lavender Simple Syrup Test Commenced! That's how a lot of my recipes begin. When I taste something delicious, the idea machine starts moving.

The Ingredients:
Water and Sugar- For a traditional simple syrup, you have a 1:1 ratio of water to sugar. I have boosted the sugar content to 1 & ½ cups, to make it less watery and a bit thicker in consistency. Oh, and I like things sweet, so there you go.
Dried Culinary Lavender- Lavender is known for it's strong fragrance. I love the floral notes that it possesses and brings to beverages. It really is like something I've never tasted before.
How to Make Lavender Simple Syrup:
Step 1: Pour water into a medium saucepan on medium heat. Before the water starts boiling, and you see little bubbles coming up around the edges, add in the sugar. Stir gently until the sugar is completely dissolved in the water, about three minutes. Do not let the sugar water mixture boil rapidly. Drop the heat and stir if this begins to happen.
Step 2: Once the sugar has dissolved completely, turn off the heat and add in the dried lavender. Allow this to steep in the pot and cool down for 30 minutes.
Step 3: Strain the simple syrup with a fine mesh strainer a few times to remove the lavender. It is perfectly fine to have a little bit of excess lavender specs in the syrup. Transfer to a jar with lid and enjoy in cocktails, coffees, lemonades and more!
Expert Tips:
- Don't let the sugar water boil too rapidly. Drop the heat a bit if this happens.
- Make sure to allow the lavender to infuse for at least 30 minutes to get the full taste.
- Careful when straining, not to splash the simple syrup out onto the counter, because it makes a sticky mess.
Recipe FAQs:
I purchased mine at World Market in the spice section and it was only $2.00, which was enough for two batches. They also have it on Amazon, which I will link in the recipe card below. Another option is you can grow your own lavender and dry it.
The dried lavender actually doesn't dye the syrup purple. It turns it into a light yellow, brown color. Most people add food coloring to the syrup. I like the natural route, but you are more than welcome to add coloring. Just don't overdo it with the drops or it may end up changing the taste.
I haven't tested other sugars, because I personally love the white sugar paired with lavender, but you should be fine to use brown sugar, palm sugar or coconut sugar in this recipe in equal amounts as the white sugar.
I use Swing Top Glass Bottles for all of my syrups (linked in recipe card). They work great to keep them fresh & create minimal mess compared to other containers. This lavender simple syrup will stay fresh for two weeks in the fridge.
