This Bacon Gruyere Egg Bites Recipe combines bacon, eggs and gruyere cheese for a quick and delicious breakfast. These are a Starbucks copycat recipe that are baked in a muffin tin to make the recipe extra easy. Like my Asparagus Puff Pastry and Brioche French Toast Casserole, these egg bites are ideal for brunch too!
Crispy bacon & cheese make these egg bites really over the top delicious! It's like a mini frittata-the perfect bite sized breakfast.

The Ingredients:
Eggs- The main ingredient and I wish the picture above showed how blue our eggs are. We have two Ameraucana chickens in the backyard and they lay blue eggs. It's super cool! Eggs are full of protein and a great choice for a healthy breakfast.
Milk and Sour Cream-Adds creaminess and a fluffy texture to the eggs.
Gruyere Cheese-A type of Swiss cheese that melts into a creamy cheese.
Monterey Jack Cheese- A mild cheese known to have great melting properties, just like Gruyere.
Bacon-Original or Applewood bacon are used in this recipe for a crispy, salty topping that pairs wonderfully with the cheeses.
Salt and Pepper- Just a touch for seasoning and flavor.
Substitutions & Additions:
Are you vegetarian or someone you're serving is? Leave the bacon off entirely or just leave a few egg bites bacon free.
Looking to add in some veggies? Chop up ⅛ cup of fresh spinach and add into the egg mixture. You could also sauté a few tablespoons of onions, bell peppers or mushrooms with the bacon to add to the topping.
Can't have milk? Leave it out of the recipe. They might not get quite as fluffy, but they will still taste great.
Not a fan of Monterey Jack or Gruyere? Cheddar Cheese would be great in it's place too!
How to Make Bacon and Gruyere Egg Bites:
Step 1: Preheat oven to 325 degrees. In a medium sized skillet, sauté bacon on medium low heat until nice and crispy. I like to cut mine with scissors into small pieces before frying. Transfer bacon to a paper towel lined plate and set aside.
Step 2: Into a large bowl or a pyrex dish (my preference for having a spout), whisk together the eggs gently until blended. Pour in sour cream, milk, salt and pepper and half of the cheese, roughly ¼ cup of each cheese. Whisk again until fully combined. Note: Don't over whisk because it could take some of the fluffiness out of the eggs.
Step 3: Chop the bacon up even finer and set it aside with the remaining cheese.
Step 4: Spray a 12 count muffin tin with cooking spray or wipe each muffin cup generously with vegetable oil. Pour the egg mixture just a little over half way full into each muffin cup. Bake for 10 minutes.
Step 5: Carefully pull the muffin tin from the oven and top with remaining cheese. The eggs will still be gooey.
Step 6: Top the cheese with the crispy bacon. Bake for another 10-15 minutes.
Step 7: Allow the egg bites to sit and cool for 10 minutes before running a butter knife around the outside of each one and removing them. Serve warm and enjoy!
Expert Tips:
- Use regular bacon, not thick, or it won't get as crispy.
- Avoid over whisking the eggs.
- For the second portion of cooking, bake 10 minutes if you like softer eggs and closer to 15 minutes for well done.
- The eggs may sink a bit and this is completely normal! The eggs bites fill with air in the oven, then deflate a little once they cool.

Egg bites cook between 20 to 25 minutes in a 325 degree oven. It really depends how you like your eggs cooked, on when to pull them out of the oven. I would not go over 25 minutes or they may get overcooked and rubbery tasting.

- 8 large eggs
- ⅛ cup whole milk (2% is fine too or even skim)
- ¼ cup sour cream
- ½ cup Gruyere Cheese, finely shredded
- ½ cup Monterey Jack Cheese, finely shredded
- ½ teaspoon salt
- ⅛ teaspoon black pepper

Can you freeze the eggs bites

Hi Linda, I have not personally, but people do freeze them. They will stay good for up to a month in the freezer. Just make sure to pack them tightly in a vacuum sealed bag or wrap in plastic wrap, then foil and store. I would let them unthaw for about 30 minutes before baking again:) Let me know how it works out!
